Today I have decided to go vegetarian, I've been thinking about it for a while also my DH wants to try as well which is great! I won't force it upon the kids 3 and 6 but they will eat the same evening meal as us.

Am looking for some inspiration so far for this week we have

Tonight ....Roasted peppers stuffed with med veg cous cous and topped with mozzarella cheese kids won't eat that so they will have cheesy pasta.

Sunday
No meat roast dinner am never fussed on the meat anyway so will do stuffing,Yorkshire puds, roasties, cabbage, carrots, brocolli, gravy will throw some sausages on for the kids or chicken breasts.

Monday
Mixed chilli bean and cheese quesdillas with smashed avocado and salad

Tuesday
Mushroom and spinach risotto with garlic bread and salad

Wednesday
Mixed med veg in a tomato sauce with roasted cubed sweet potatoes and corn on the cob

Thursday
Leftover veggies/fridge bits omelettes (we have pet chickens so this is a regular in our house)

Now am stuck on some other meatless meals.....

I don't really want to use meat subs I think I won't miss the "taste" of meat. I use lentils a lot anyway even when cooking with meat think I might add some to my med veggie meal this week.

Quorn mince, veggie burgers etc don't taste like meat. They're basically a tasty convenient filler.

I wouldn’t write them off. There are some great ones now. Richmond sausages are brilliant-we’ve got them for Sunday lunch tomorrow.

I'm doing slimming world as well as vegetarian.
Today we had veggie hotdogs (using Richmond meat free sausages)
Tomorrow is a veggie roast
Mon - Chinese fakeaway (veg fried rice, salt and chilli chips and curry sauce
Tues - Veggie burgers
Wed - toastie pizzas
Thurs - pasta (possible pesto or cheese)

Favorites are channa masala, saag aloo and Jamie's veggie chilli.

Lots of quiches you can easily make & serve with salad / new potatoes

Cauliflower & broccoli cheese

Veg kebabs (can include halloumi too) with whatever veg you like mushroom/red onions/pepper, tomatoes or courgette

Veg casserole, dumplings and mash

Veg stir fry with tofu marinated pieces

Falafel wraps with salad and tsatziki

As someone said above puff pastry sheet rolled out with pesto (red or green) then whichever toppings you like e.g mushrooms, peppers, olives or capers, cherry toms & sprinkling of cheese

Veg sausage & mash

Sweetcorn cakes and chilli sauce

Homemade veggie burgers (made out of vegetables if you are not keen on meat substitutes). Most supermarkets do a range of vegetable burgers e.g. Tesco mushroom burgers, Waitrose do something like Vegetable kofta and an aubergine burger

Cheese and onion or vegetable pasties

I went veggie on 1st jan op I am loving it.

I've been really loving these two below.

100g risotto rice
Packet of sliced leeks
Packet of chopped white onion
Asparagus
Petit poi's
Garlic
200g feta or reduced fat feta

All fried in garlic fry light then the rice added into the pan, carry on frying for five mins and add a glass of white wine, then about half a pint of veg stock, and the feta and simmer till the rice is soft a d the feta has melted. The liquid eventually gets absorbed.

I get four portions from this.

1 courgette spiralised
Petit poi's
Garlic
Asparagus
Spring onion

Fry all the veg except the courgette
When it's soft, add the courgette for about two mins.

I usually add two tablespoons of truffle oil at the end and stir through as I love the flavour but it's not for everyone.
You could use a different flavour like garlic oil.

I get two portions for this.

Usually top it with halloumi.

The thing I am enjoying most is those lo dough wraps with peppers onions done in the old El Paso mix with avacado and feta.

The lo dough are only 39 calories each and you can make pizza and pasties with them aswell which is a nice change.

stir fries with noodles or rice
sweet potato and pea curry with rice or naan
chickpea and butternut paella with smoky paprika
pasta all'arrabiata
gnocchi bake with fresh herbs, tomatoes and mozzarella
home made pizzas
chestnut and mushroom bourguignon with shallots, red wine and creamy mash
veggie ghoulash with fresh herb dumplings
veggie nut-crumble

and don't forget the basic old ones:
eggs, beans and chips
baked potato with grated cheese and home made coleslaw (you can add seeds and nuts and red cabbage to the slaw.

I did them one Christmas first and put some cranberry sauce in too because I can’t resist freestyling a bit! I tend to always do that now if we have any around, or a bit of chutney or something - I just like the extra sweetness, but obviously not necessary

Meat subs taste nothing like meat whatsoever despite the advertising attempt at spin. They can be pretty nice to eat in their own right though so perhaps give them a try and see what you think before dismissing them.

Agree on the meat subs. I didn't use them at all for the first few years so they're certainly not necessary. Now I do enjoy the ease of using cauldron sausages every now and then (was never bothered about actual sausages really when I ate meat!) and we have quorn mince in a chilli maybe once a month - its quick and cheap and good for batch cooking. There are nicer ways to make a vegetarian chilli but I quite like having the option.

Other people have cooked some of the other substitutes for me and they've been nice. And during lockdown one we received quorn nuggets as a substitution for the mince and thoroughly enjoyed them though haven't repeated the experience since Grin

What does piss me off is how hard it is to find a decent bean burger or actual veggie burger when eating out now, everywhere seems to go for a meat replacement type. I never particularly liked a meat burger but always enjoyed the chickpea/bean type ones. I mean, not that we can eat out really now so it's not an issue.

Actually OP that reminds me that Aldi does a nice range with things like beetroot burgers or butternut squash ones - if you ever do fancy an easy option.

Yes, those are lovely. Lidl spicy bean burgers are my favourite.

I think you’ve got to be realistic and having some easy freezer meals is sensible.

I’ve got a fake fish finger sandwich for dinner.

I'm not vegetarian but I often eat meals that don't have meat in them. Tonight I had a weird selection of food that needed to be used up and it was absolutely delicious.

Cooked beetroot
Cauliflower
Walnuts
Goats cheese
Into a shallow dish smothered with a blue, cheddar and mozzarella cheese sauce and grated cheese over the top. Bunged into the oven and served with salad.

Still clearing out the freezer of all the christmas left over bits so I'm sure there will be many more delights like this to come :D
