... is utter filth?? I mean, who the hell thought caramel and salt actually go together? Do you think someone used salt instead of sugar and thought "hang on, I might be able to get away with this...."

It's been done to death, salted caramel and gin and tonic flavoured everything! Ice pops, chocolate, crisps, cocktails, candles, popcorn, desserts, cakes, biscuits, drinks, ice creams, yoghurts, peanuts, everything!

It’s overdone (and when it’s some Costa latte bullshit or cheap Tesco pudding, it’s just plain artificially flavoured caramel) but a touch of salt to bring out rich, sweet flavours had been around forever. You just need to eat or make better quality food to understand it.

You need a bit of saltiness in caramel to counteract the sweetness. If you ever try buttercream made with unsalted butter v salted you'll see what I mean, unsalted is grim. Anything sweet benefits from the balance salt brings.

But yeah, I also love bacon and maple syrup, pork & apple sausages etc and I must admit the best pie I ever ate was a meat pie made with sweet pastry - not sure if it was a mistake, but I had it 10 years ago and still remember how tasty it was.
