Veggie chilli con carne as I'm working from home so will be in cooking duty. Kids love it with pasta.

Sausages with baked potato and beans. Not very interesting but the kids are off school due to ice so I can't get to the supermarket.

Just finished seasoning a giant slab of dead pig with crackling ready to smash into the oven later on. Sorted some veg too, just some spuds, carrots and leeks (yes, leeks, I like leeks) so nothing flash but damn it's gonna be good eating.

Shaved ham, tinned carrots and peas, tinned sweet corn, onion and peppers (sweated) all mixed in with rice and maybe some sweet chilli sauce or some cheese depending on how I feel. It is a favourite in this house and super cheap.

Roast chicken, potato mash and chicken broth soup.

Melanzane parmigiana, or rather, the simplified version -

slice 2 aubergines reasonably finely (about .5cm?) and fry with gallons of olive oil until soft

simmer 2 tins of chopped tomatoes with a tablespoon or two of pesto for at least an hour

Grate as much parmesan as you can reasonably part with (the big block of own brand in Waitrose is the cheapest)

stir it all together and put it in the oven (covered) for an hour at 170 degrees.

Serve with pasta.

Steak & rice bowl. Lots of stir fry veg and a chilli & ginger sauce.
Then tomorrow is a sausage and potato bake with baked beans, pepper and onions.
