Chicken balti made by me using a PataKs spice paste. Add an onion, a pepper, a tin of chopped tomatoes and some coconut milk, extra chilliest and it's done. A family favourite round here.

just been out for another work lunch, DC eat at after school club so DH will be having cheese toasties I think

ooh, we have some nice cheese at home. Ok, cheese and crackers.

It was 8 whole tomatoes, halved
half an onion, six cloves of garlic and a red chilli all roughly chopped
Put in a roasting pan with the toms face down. Then I put in some basil and oregano and spritzed with oil coz I’m on a diet. 190 for 45 minutes, whizz with a pint of stock.

I had Parmesan on the first mugfull but haven’t bothered for the second (or third...)

I only made it because I accidentally ordered tomatoes and we had loads already but I’ll make it again.

I had dinner earlier (not in the UK) I had a chicken massaman curry with rice and roti. It was yumlicious!

Cheese and tomato pasta bake with garlic bread. DH is on a late shift and we have no DC so it is an easy meal for one.

Bean on toast with melted grated cheese on top. Just finished it and it was awesome. DH is away and i am going out shortly so i needed a quick easy tea.

Anna Jones' vegan chilli with rice.

I'm not vegan or even vegetarian but the recipe is fab and the DCs love it. Plus it makes approximately a ton of chilli so there's enough for at least another meal.
