What cold, no-cook, straightforward dinner are you having tonight?

I'm planning tomato and basil salad, some sort of salad with cold chicken/yoghurt/apple/walnuts, and a shedload of melon. And Lidl mini magnums for pudding!

I am getting a teeeny bit sick of tomatoes though so any other inspo for the rest of the summer is welcome...

The only room in our house that is cool in the morning is the kitchen otherwise I wouldn't bother cooking at all!

Yes, I know it involves cooking potatoes but I assume they can be microwaved or maybe use tinned ones?? Also, I use Little Gem or Cos lettuce rather than watercress

Not really, despite that side of the house being pleasantly cool to sit out in late in the evening & the doors/window's being open. It was still 30° in there when I went to bed last night about 1 am. It's bizarre because it doesn't feel like it retains heat well in the winter, but in the summer you can't call it down.🙇🏻‍♀️🙇🏻‍♀️.

The sun is not directly on the kitchen window any more it's on the side of the house though I'm in the bedroom which is on the other side of the house to the kitchen and until the sun comes round I'm staying here but it's now 32° with the fan on I'm just about to go and have a shower and then pick my coolest spot for a couple of hours before I relocate again.

I'm not sure which of the forecast I believe the one where we've got another heat wave right on the back of this one or the one where we end up with temperatures in single digits. I'm crossing my fingers for single digits and will not be complaining about it.!!

Today I’ve only eaten strawberries so far. No appetite in this heat.

For dinner I’ll be having a salad with cold gammon I cooked in the air fryer with minimal effort last night. So yes I cooked it last night but especially to have cold. I just wrapped it in foil, chucked it in the air fryer on 170 for 70 mins. Doesn’t heat up the kitchen and took a minute to prep other than taking it out of the fridge to get to room temp

Mackerel pate, food processor a pack of smoked mackerel (take the skin off) with a tub of mascarpone and juice of a lime. Eat with bread sticks and chopped veg eg carrots cucumber celery

Lettuce, celery, houmous, olives, crusty bread with butter, halloumi (ok, I did grill this!) and cherries for after.

I had a mixed salad of some merchant gourmet grains, rocket, lettuce, red pepper, feta, olives, baby plum tomatoes spring onions and chopped gammon.

I had a tuna salad on a hot honey flat bread
tomatoes and hummus on the side

Burger king delivery tonight as I'm by myself. Yeah yeah I know.
