What cold, no-cook, straightforward dinner are you having tonight?

I'm planning tomato and basil salad, some sort of salad with cold chicken/yoghurt/apple/walnuts, and a shedload of melon. And Lidl mini magnums for pudding!

I am getting a teeeny bit sick of tomatoes though so any other inspo for the rest of the summer is welcome...

Salmon mayonnaise, potatoes with chives and lovage (and butter) lettuce, cucumber and small plum tomatoes.

Potatoes and salmon both cooked in the microwave so no hot stove to toil over.

I had to cook the remaining 3 salmon fillets in the pack (no idea what I was thinking) so two of them have gone in the freezer and I'll have the remaining one tomorrow, possibly as salmon mousse.

Steak Caesar salad- cooking steak but only takes 4 minutes and croutons currently cooking in pan take 3-4 minutes. Yesterday had smoked mackerel salad

Watermelon, feta and mint salad is what I wish I was having. Or Fatoush (the Lebanese salad). In reality, scavenging leftovers until I can face going shopping. At least the fridge will be cleared out.

This week we've had:

Ploughmans. Ham, boiled egg, chutney, baguette, cheese, grapes etc.

Tuna mayo sandwiches plus carrot sticks and hummus.

Falafel, cous cous and coleslaw

Nachos. Just tortilla chips topped with grated cheese, sour cream, diced avocado, spring onion and salsa.

Tonight I really CBA and think I'm just going to do a cheeseboard and have a G&T.

I am having marinated pork steak stomorrow how long did you air fry them for ? Sorry off topic I usually just pan fry them.

They were quite thick so I did them for 17 minutes. Thinner ones probably around 12-13 mins would be enough.

Cold sweet potato and sweet chilli tofu bowl. Slow baked a bag of sweet potatos at the beginning of the week, been so useful!
