What cold, no-cook, straightforward dinner are you having tonight?

I'm planning tomato and basil salad, some sort of salad with cold chicken/yoghurt/apple/walnuts, and a shedload of melon. And Lidl mini magnums for pudding!

I am getting a teeeny bit sick of tomatoes though so any other inspo for the rest of the summer is welcome...

They were quite thick so I did them for 17 minutes. Thinner ones probably around 12-13 mins would be enough.

I just bought all yellow sticker things from Sainsbury's, salad, cherry tomatoes, cold ham, plan to have with a few small potatoes.

I got a load of yellow sticker fruit and veg items from local tiny Tesco plus a watermelon. Lucky I drove today.

This thread is epic, thanks everyone!! Lots of lovely ideas here - I'd forgotten smoked mackerel, which I absolutely love either whizzed up with sour cream and lemon, or flaked in a mache salad with boiled new potatoes.

My mum makes the greatest potato salad and she brought that round yesterday with an M&S cooked chicken. We had it with sourdough baguette and green salad and it was bloody delicious.

I saw a coronation potato salad in Lidl today - might make that this week. I also have a puff pastry base on the fridge so may do a French tomato tart one evening (when it's cooler) to have the next day!

I did our chicken salad in little gem lettuce cups tonight and it was a hit. Also melon and Serrano ham, plus the tomato salad - delicious.

Slightly craving a chicken caesar now though so will put that on the rotation, and I did think I could do a ham in the slow cooker for a ploughman's or two next week. Pink pickled onions are v easy to make and are an excellent addition to many salads, btw

We had antipasti pasta! Cook some pasta, cool it down and then chuck in the little pots of sun-dried tomatoes, mini mozzarella balls and chargrilled peppers that usually come with garlic and herb infused oil in. i demolished a whole tub of Haagen Daz a couple of hours ago.

I did have a healthy and delicious salad for lunch but it just got to hot to care for dinner

I can't actually remember the last hot thing I ate! I've had one hot coffee & the rest cold (espresso with cold milk put in the freeer)

I live alone and so don't need to come up with anything impressive 🤣. I have a few health issues and this heat is making them much worse. I just can't stand long enough to do anything very much. So most nights dinner is a wrap flat in a pasta bowl. Something spread on it usually houmous but sometimes a plant based mayonnaise lots of leaves usually rocket. They had lots of chopped up salad, cucumber, mini peppers, small tomato radishes and either some cubes cheese or vegetarian protein sometimes a couple of spoons of coleslaw or a basil mozzarella (courtesy of Tesco) pot tipped on top.

eat most of the salad, wrap the last few bits and enjoy! Had there again tonight.

The last three nights I had 'the real Greek' New dishes lentil salad, chickpea salad & aubergine salad. I had bought them as toppings for the normal salad wrap thing but actually couldn't be asked with doing anything so just ate them as they were out the containers they were like airline dishes.🤣🤣

Mine was Sainsburys cooked firecracker chicken breast slices with salad I made this morning from random veg I found in the freezer - mixed sliced pepper, sweetcorn, peas, greenbeans and a healthy whack of chopped up pickled jalepenos.

bought silver skin pickled onions are tasty edition too and don't require anything except ordering them🤣🤣

Minimal cooking - chicken breasts in the air fryer then thinly sliced, spinach leaves, peppers and cucumbers, grated carrot and various dips to make your own wraps. DCs love this so I've made it a few times this week.

I've just assembled the salmon mousse for this evening. There are a few sausages in the fridge that I think will enscotch a hard boiled egg or two for Sunday. Then depending on the weather I may detour to a supermarket on my way back from craft group on Monday and buy a chicken breast or two.

Today I'm stir frying a load of vegetables with ginger, soy sauce, honey and noodles whilst the kitchen is cool then either have it cold tonight or quick heat up in the microwave.

Another quick favourite is bagels eg with cream cheese, smoked salmon and capers and a green leaf salad.

Hummus, falafels, pita bread, carrot, coleslaw with above stir fry.

Another quick favourite is bagels eg with cream cheese, smoked salmon and capers and a green leaf salad.

Hummus, falafels, pita bread, carrot, coleslaw with above stir fry.

My kitchen was 32° by 6.30 this morning. I had got up to do a few things, but it was already unbearable! 🥵

I've a homemade quiche pulled from the freezer, so just a reheat in the air fryer served with salad, coleslaw and jersey royals.

Did a ciabatta filled with steak, chutney and a side salad the other night as standing over the cooker for longer than a few minutes is just not happening.

Cheese, crackers and fruits are all on tap if still hungry.
