What cold, no-cook, straightforward dinner are you having tonight?

I'm planning tomato and basil salad, some sort of salad with cold chicken/yoghurt/apple/walnuts, and a shedload of melon. And Lidl mini magnums for pudding!

I am getting a teeeny bit sick of tomatoes though so any other inspo for the rest of the summer is welcome...

Cold leftover rice and chickpeas with chopped cucumber and red peppers, sun dried tomatoes with jar sauce and a medium tin of tuna in olive oil (not drained).

Dessert is EITHER
Lidl sponge flan base with chopped fresh fruit and unfrozen raspberries. Vanilla ice cream. OR
Sweet white wine with chopped peaches. Crushed biscuits and readymade custard (cold) over.

I've got cooked chicken, cooked bacon and salad veggies in the fridge. I'm going to do some frozen baked potatoes in the microwave, and make the chicken into coronation chicken, stuff it in the spuds, sprinkle some bacon bits on top and serve with the salad veg on the side. There's yogurt or fruit for pudding, or some mini muffins kicking about.

I don't follow a recipe but have made it with boiled eggs and bacon for years and I'm sure I've had it in restaurants like that too. At the very least with bacon 🤔

I was starting to think I'd somehow gone off piste along the way, but I've found several recipes, so hopefully I haven't gone completely mad.

Cooked skinless sausages and pasta shapes at 7am yesterday and cooled. We had them last night in a huge bowl with lots of cucumber, peppers, spring onions and baby toms (all cut up small). I kept little bit of pasta water back which I used to thin some Hellmans and added a squeeze of tomato puree to the mix as well. Seasoned and a grating of cheese on the top. We ate it last night and there's enough for tonight.

Anyone else still cook in the heat , I love hot food to much 🤣 don’t feel like iv had a proper dinner if it’s cold food feels more like lunch . Or am I just a greedy sod

I’m going out for dinner tonight but last three nights have been salads:

Cold poached salmon, prawns, peppers, tomatoes, chicory, romaine, marinated artichokes and ricotta stuffed peppers

Cold chicken, cold new potatoes, hardboiled eggs, anchovies, tomatoes, peppers, romaine, croutons, Caesar dressing

Cold new potatoes, pear, hardboiled eggs, smoked mackerel fillet with horseradish creme fraiche, pumpkin seeds, spinach, chicory

Tuna salad. I'd love a proper nicoise but I can;t face boiling eggs, potatoes and steaming green beans. So tuna, olives, cucumber, lettuce, tomatoes, crusty bread

I've made a big bowl of black beans, sweetcorn, finely chopped red onion, chopped baby plum tomatoes, finely diced red peppers, avocado chunks and some chopped fresh coriander leaves, mixed with smoked paprika, chipotle paste and lime juice. To be scooped up with tortilla chips, and a sprinkle of cheese and dab of sour cream.

Not greedy - probably way more healthy.

I find I want salad at mealtimes but eat way more overall in this heat. Endless cravings for salty snacks, sugar, carbs and wine. But not proper cooked food which might stop the cravings.

The DC (4 and 1) had cheese toasties with cucumber, pepper and cherry tomatoes. Neither are eating much in the heat so didn't want to cook pasta or something and nothing get eaten. The 4yo ate all of it, the 1yo refused and ended up with a bowl of wheatabix just to get something down (didn't eat lunch either). Both had fruit and yoghurt for pudding.

DH and I are having mussels with a baguette when they're in bed as I saw them in Tesco on my 'please have a nap' walk with the 1yo earlier 😆

Chicken Legs cooked on Ninja Woodfire thingy, pasta salad with pesto, broad beans with minty yogurt, sourdough bread to clean round the plate.

Husband is currently lighting the BBQ to have burgers and salad.

I'm laid indoors in front a fan with a cool drink until it's served up, so that is my no-cook win.

I cooked up a boneless chicken - sundried tomato and parmesan i think... from waitrose at the start of the week, that did 2 meals and a lunch for me. Today I cooked some chinese spiced chicken thighs from a bag from Tesco. Have shredded/pulled them. Bread, shredded lettuce, cooled roasted tomatoes, radishes and spring onion - tea tonight for 3 of us.

I WOULD suggest sacking it off and getting some crusty bread to go with a nice salad but all these other crusty bread bastards got there first and there’s none left for me!
nice bakery was down to a few sad looking loaves and not much in Waitrose either, that was about 11am 😂

we wanted some to go with our not cold dinner, we’ve got a massive piece of Denver steak to bbq, proper homemade chips and salad. Obviously no crusty bread to go with it 😭😭

I CBA to cook so we are jerking a pork tenderloin (Caribbean moderately spicy marinade rub that comes in a jar). It was originally going to be roasted, wrapped in pesto and parma ham. Pork is cheap (at least on Ocado). We’ll have it with new potatoes and whatever salady stuff I can find in the fridge. We have some Kachumber salad I made 2 days ago as well as jars of grilled veg.

Just me here, so it's egg mayonnaise, spring onion, a couple of slices of ham, and my own home made soda bread. That's enough for me, it's too hot for a bigger appetite. Will follow with a white Magnum.
