If you went to a cafe.....what would you have?

I'm just revamping our menu for the summer and could do with some help please.
So....meze boards, what would you have on it for meat eaters, veggies and vegans.
Or poke bowls, or paninins or salads??
Please throw your ideas at me.

I bloody love a cafe that still serves toast! Plain, old fashioned, white bread toast (that I don’t have to butter myself). Seems hard to find these days though!

I always want something I can’t easily whip up at home or would be a faff to do so. I love a good homemade slaw on the side. A proper panini in a sandwich maker with fresh ingredients is always a winner. My local Italian cafe makes one with mozzarella and beef tomatoes and a homemade potato, it’s so simple but so good. I could make it at home but probably wouldn’t, so it’s my go to.

I love an afternoon tea . Scone, jam, cream , buttered toast , toasted teacakes , Welsh cakes with butter on .
Lovely Ploughman's , home made Quiche , slices of hine made sponges , coffee and walnut , Victoria, Carrot cake .
China teapots of tea , china teacups and saucers , pretty gingham tablecloths, lovely serviettes , Doyleys , cake stands , crustless Sarnies , cheese scones , jam tarts , Eccles cakes , custard slices , sausage rolls ,Scotch eggs , Pork pies , any good old fashioned high tea type fayre 😊

I would be quite happy for the meze but don't want bog standard cold meats, factory produced dip or cheap olives. I also would want homemade or at least decent bread. I suspect though this would not be easily possible to produce at an affordable yet profitable price.

I would like things like homemade smoked fish pate with nice toasted bread.
Nice bread with dips like olive dip, hummus etc.
Made to order sandwiches so I can pick what I want in it.

Budha bowls
Smashed avocado on toast with lime.
Scrambled tofu on toast.

Cake wise it has to be lemon drizzle ( make sure there is lemon curd in the middle!) Coffee and walnut and also a good cherry sponge.

Nice sandwiches made with fresh ingredients - hopefully at a price that doesn't break the bank! For veggie options, I always enjoy fritters as well as the obvious salads

Absolutely no sharing boards. They are disgusting. If you serve mezze please put it in separate bowls with their own cutlery, not a board everybody grabs from.

A good fresh veg based soup. Fresh hot rolls (ie parbake) with a GF roll option too. Easy from the freezer for both soup and rolls.

Homemade porridge with brown sugar sprinkled over. So easy but good porridge is hard to find.

Also a few tray bakes like Milky Way blondies, salted caramel brownies, cookie slice, and i love good wholemeal, cinnamon and apple muffin - these are like gold dust in cafes, I only ever find muffins in places like Pret.
