I love lentil soup when it's cold outside, really warms you up.

Leek and potato or carrot and coriander are made frequently here too.

My mam made an amazing spicy beetroot soup once, it was the most ludicrous shade of purple and was absolutely delicious, unfortunately as she's a bung-it cook and wasn't following a recipe she's never been able to repeat it. That was my favourite though 🙃

Close runners up are hot and sour, carrot and coriander, Vietnamese tomato egg drop soup, or a really good hearty chunky vegetable soup.

A sort of minestrone, not sure it would be approved by Italians!

Saute some finely diced onion, carrot and celery in oil/butter. Once softened, add some garlic and pinch of dried oregano (or Italian seasoning). Add tin of finely chopped tomatoes (my choice is Mutti) a chicken stock pot and then fill the empty tomato tin with boiling water twice, adding to the mix. I also add canelloni beans if I have them and a cup of sweetcorn and a shake of chilli flakes. Let it all simmer very low for at least half a hour. Add tiny pasta shapes (or break up spaghetti) and a spoon of sugar and let it cook until the pasta is soft.

Ham hough, broth mix, chunky veg, loads of grated carrot to give it a nice golden colour and a bit of sweetness, plenty of ham stock, salt and pepper.

Needs to be robust enough that a wooden spoon will stand upright.

Avgolemono soup. Greek children and lemon. Lovingly referred to in my house as Avololololo soup. It's tricky but delicious.

I hate soup. The thought of having food as a liquid and blended together makes me feel ill. A lot of them also contain tomato which I'm allergic to so not a great food for me!

In the summer , courgette and cheddar with a pinch of nutmeg.
In the winter
Otherwise, a meaty broth with lots of veg and grains after a roast.
Leek and potato, tomato and red capsicum, lentil and bacon are regular makes.
My favourite that I don't make myself is my best friend's Thai chicken soup. It is heaven in a bowl.

I can't bear lentils in a soup. But I love a red lentil dhal and often make a huge pot of it and portion in the freezer for my work lunches.

Pea, ham & mint soup sounds yum. I made a pea & mint soup (think it was a Nigella recipe) which was really good I might make it again and add ham!

Bacon and Lentil. Very chunky with lots of veg. Yum.

Once made a cauliflower and walnut which was amazing. Not sure why I haven't made it since as it was truly delicious and I still think of it about 15 years later 😂

I always have four soups portioned up in my freezer for lunches at work…

Thai Chicken and Sweet potato
Roasted butternut squash, pepper and tomato
Harissa tomato, bean and spinach
and
Curried veg and brown rice

They are all low calorie, easy to make and delicious and the variety means I don’t get bored with soup everyday.

Which is ridiculous really, as I love soup, especially ones with parsnips. Must try harder.

Cauliflower cheese soup.
Loaded tattie soup (basically a thin cheese sauce with potatoes cooked in with bacon bits on top).
Homemade Minestrone soup.
Pumpkin soup with coconut milk and lemongrass, garlic, ginger, lime, chilli etc.

I love soup. We often have it for our main meal.
