Butternut squash.
1 x Butternut squash, a couple of carrots, a red pepper, some ginger and a bit of chilli. Roast for about 45 mins. Make up about 1.5l of veg stock add to the veg and blend. Delicious.

I am obsessed with soup Blush

The ones I make and eat regularly:

Pea and ham
Chicken and mushroom (not "cream of", dark and rich with puy lentils and big chunks of portobello mushrooms)
Tom yum chicken
Coconut, sweet potato and chilli
Mulligatawny
Leek, potato and cheddar
Broccoli and Stilton
Minestrone
Scotch broth
Red Devil (tomato, lentil, garlic, smoked paprika and lots of very hot fresh and dried chillies
French onion
Night Vision Soup (named by my kids) - carrot, butternut, sweet potato and pumpkin with nutmeg and paprika and a bit of cream.

Pea and Mint, hands down the best soup ever IMO. Sometimes I spoil myself and buy the tin from M&S...life is so rock and roll now...

A sort of minestrone, not sure it would be approved by Italians!

Saute some finely diced onion, carrot and celery in oil/butter. Once softened, add some garlic and pinch of dried oregano (or Italian seasoning). Add tin of finely chopped tomatoes (my choice is Mutti) a chicken stock pot and then fill the empty tomato tin with boiling water twice, adding to the mix. I also add canelloni beans if I have them and a cup of sweetcorn and a shake of chilli flakes. Let it all simmer very low for at least half a hour. Add tiny pasta shapes (or break up spaghetti) and a spoon of sugar and let it cook until the pasta is soft.

Sounds about right to me - I also add cabbage and sometimes chillies.

You simmer the cauliflower in stock and milk - it tones down the caulifloweriness a lot

Cauliflower soup is really good. I often make cream of cauliflower and broccoli soup.

I love soup! DM used to make parsnip & apple, which was delicious, plus really lovely carrot potage with sage. I think her “hearty soup” ( or “farty soup”as us kids called it!) is probably my favourite. It was different every time as she used up whatever was in the fridge.

I love soup and make it a lot. My favourites are,

Lentil and veg
Sweet potato and chilli
Lentil, chickpea and chilli
Tofu and bean
Bean and veg
Chickpea and tomato
Carrot and cauliflower

My current favourite is one I made up:
1 litre veg stock
1 pack soffrito
2 tins mixed beans
1 tin sweetcorn
1 jar passata
salt and pepper to taste
Very simple and delicious, serves 6.
