Your favourite way to eat pasta

If I'm out I love a well made lasagne. At home, for a quick and easy dinner, I love making a sauce with Boursin cheese and having it with penne, mixed with chicken and doused in doused in lemon. Anything creamy and garlicky is a winner.

And sometimes you just can't beat a good plate of (very cheesy) macaroni cheese with garlic bread. I'm not sure if that last one is a British thing or a Scottish concoction. Up here macaroni cheese always comes with garlic bread.

What's your favourite way to have pasta? Answers in more detail than "by the tonne weight" please.

I bloody love a good macaroni cheese. I used to make one finished off with a layer of sliced tomatoes and sprinkled with sunflower seeds.

For a quick n dirty midweek speed meal I'll fry off sliced mushrooms with loads of salt and white pepper, then stir those through pasta with a big dollop of hummus.

We like a "chicken fajita" pasta bake here too.

And if I don't serve garlic bread with pasta my kids react like Kevin the Teenager 😄

I forgot tomato purée and a stock cube

Creamy Cajun chicken pasta is my absolute favourite. If I'm sodding the calories I make the sauce with double cream, Parmesan and Cajun spice. Otherwise I replace the cream with light Philadelphia. Pan fry the chicken with peppers and onions and more Cajun spice and then mix in the sauce. It's my absolute favourite.

Do you have a recipe?
After I wrote my list I realised I love this pasta but I couldn't remember what it was called. I always choose it if I see it on a menu and always on holiday as it's always on menus in the Caribbean.

Thanks so much @RemusLupinsBiggestGroupie, that sounds delicious.

This thread is awesome.

@GreenMarigold , we have the same pasta tastes. Just add spinach and ricotta cannelloni to the list!

MrsCharlieD · 28/02/2024 06:29

@TheRealKatnissEverdeen I'm afraid I don't, I just chuck stuff in! I start by frying off the onions and peppers as I like them caramelised, I fry off the chicken and marinate in Cajun spice, then add the chicken to the peppers. Add a full carton of cream or Philadelphia, grate in a fair bit of Parmesan and add Cajun spice and simmer this down until it thickens. Then I do the pasta and once I'm happy with the sauce I stir it into the pasta. I don't measure quantities or anything, just taste as I go.

Have you got a recipe?

My go-to for a quick midweek meal is to fry off some mushrooms and onions, add double cream, crumble in Stilton, add cracked black pepper and stir until melted. I serve it with whatever pasta I have in, usually Fusilli.

Love a good spaghetti bol and lasagne. Also homemade carbonara from scratch with the addition of mushrooms and bacon lardons.

Sorry for the delay - this is our go to:

@Rattenbury That looks so good!

I have found my people! 🤩

Jamie's creamy sausage pasta, also the sausage and fennel, spaghetti bolognaise, puttanesca, are all family favourites.

Mushroom, pancetta, garlic and cream or carbonara if I'm feeling fancy.

My go-to when alone I s pasta with sweetcorn and spinach, pesto, lots of green olives and some of the olive brine and lots of Parmesan. I probably eat this twice a week.

I'm definitely stealing some ideas from this thread...

I forgot that baked feta pasta sauce that did the internet rounds a few years ago. Simple and delicious!

Chopped garlic in the frying pan with olive oil and chicken (I just chuck in the leftover chicken that I've stripped from a roast the night before)

Get that smelling nice then add the Boursin (half to feed two people if you're being good, the whole thing if you've any sense of joy about you) and a little milk or pasta water. Get that all melty and add lemon slices and let it simmer on low heat a while. Before you fling the pasta in, throw in some spinach leaves.

Mixy mixy then serve a big heap of it with parsley and Parmesan because there's never enough cheese. Ever.

Just made this for tea! Blimey what a revelation and SO easy, it really was delicious and a nice change from pesto or tomato. Got the black pepper Boursin and it went nicely with the lemon.

Cheers @Pastamasta!!

With a creamy lemon sauce , parmesan and smoked salmon. Crusty garlic bread on the side .

Twittiooo · 30/03/2024 20:05

I LOVE pasta.

I love spaghetti in olive oil, lots of lemon & garlic, black pepper, black olives, fresh parsley, rocket and and some cream cheese mixed through. Simple but perfect comfort food.
The kiddos love it too. It’s my lazy dinner, usually served with chunky fresh bread and butter.

Sallysoup · 30/03/2024 20:12

On a side street in Rome on a hot summer afternoon with an ice cold glass of wine.. it was a salmon penne in creamy tomato sauce and it was perfection.

Back in rainy England.. seafood tagliatelle, chicken and prawn in a creamy white wine sauce, lasagne, meatballs and spaghetti. Basically all pasta 😋

Tisfortired · 30/03/2024 20:18

Aglio E olio - I think that’s spelt right! Just olive oil, garlic and chilli flakes.

I created a pasta concoction whilst at university which my DS claims is his all time favourite meal. He honestly jumps with joy when I tell him we’re having it 😂 it’s just chicken and mushrooms, then a whole jar of red pesto, a ladle full of pasta water and a healthy glug of cream. We like to have rigatoni with it and sometimes for health I will cook some broccoli in with the pasta.

Oh the mention of broccoli just reminds me of a Gino d’Campo recipe me and DP used to make a lot when we were skint. The recipe is in the link below but it’s basically just tomatoes, garlic and broccoli. The smell of it cooking is divine and we still love it now.
