Where to relocate with this criteria

Looking to relocate in the next 12 months or so. We' have 3 children who are all at uni so not sure if any of them will be coming to stay with us for a few years or not. d like to relocate to somewhere with this criteria:

Art, culture, museums, theatre
Sailing, water sports access nearby
Countryside not too far.
Fairly safe. Have lived in rough areas so my safe criteria isn't that stringent
Multicultural - we are a mixed race family. DH is white I'm not. My kids all look like me.

Our work is all remote so anywhere is okay.

I'd have said near the Cotswold Water Park for most of those criteria but not multicultural - saying that, Swindon is very mixed culturally and only up the road. We have a few mixed race families in our village and I believe they've been welcomed as much as anyone else (though I can't speak on their behalf!) But in terms of representation, it's not great. I'm from Birmingham so I still find it shocking how "white" it is down here.
But it fits all your other requirements - the water park has a huge number of lakes with all kinds of activities (kayaking, open water swimming, paddle boarding, water ski-ing, sailing) all available. Decent restaurants. For theatre we have Bristol and Bath less than an hour away, Cirencester for more small scale productions and easy train links to London (Kemble). Cheltenham is also under an hour by road, as is Gloucester. It's really rural (and flat!) Lots of walking on your doorstep, really popular for cycling. Very safe - I walk alone in my village in winter with no streetlights without a thought. Left cars unlocked on the driveway by accident etc etc, no issues. As with all places there are some rougher areas, but if you stick to the villages you won't have an issue. Does come at a cost though!

Edinburgh, there's all the culture stuff, never really felt unsafe here. Multicultural and there's a yacht club near my house.
