In need of inspiration, I'm annoyed with myself but I just keep reverting to cheese on toast if at home.

OP posts:
Timeforchangeithink · 20/03/2023 17:24

Unusually, Heinz tomato soup and a toasted roll with cheese and ham. I'm in Scotland, it's still cold here so still on winter lunches.

AnneLovesGilbert · 20/03/2023 17:25

Can’t help you as I had homemade bread toasted with peanut butter and a banana.

Often have soup though.

LadyClaude · 20/03/2023 17:25

Porridge. Oh dear OP, I don't think my answer is particularly 'inspiring' 😂 Although I did put extra sugar on it, for that little pizzazz!

onepieceoflollipop · 20/03/2023 17:25

Jacket potato (4 minutes micro then 15 in mini oven)
butter, salt, leftover prawn cocktail and coleslaw.
small tomatoes
wispa

onepieceoflollipop · 20/03/2023 17:26

Other things I have regularly:
bagels
sandwiches
small portions of leftover dinners such as veg curry

small plate of snack type foods such as nuts, cheese slices, fruit.

Beamur · 20/03/2023 17:27

Cheese on toast is my default lunch when I can't think of anything else too.
Today I had jacket potato with cheese coleslaw and salad.
I often recycle bits of leftovers into my lunch, often as jacket potato fillings!
Leftover rice - stir fry with some veg, egg, soy sauce.
On toast - eggs/mushrooms/ tomatoes
Pitta bread with cheese ham and tomato warmed in the oven.
Homemade soup if I can be bothered

Konfetka · 20/03/2023 17:30

Hot smoked salmon and prawns fried with ginger on a bed of sautéed leeks and spinach, served with new potatoes and steamed asparagus, green beans, purple sprouting broccoli and canned sweetcorn. Hollandaise sauce.

Almost all bought at Aldi and it was yum.

ricecrispieroll · 20/03/2023 17:32

Heinz minestrone soup with a Warburtons sandwich thin.

Online shop comes tonight so tomorrow it will be as Asda prawn layered salad.

Candleabra · 20/03/2023 17:32

Sweet potato soup (cooked in slow cooker). I find being organised with lunches helps so you don’t just grab the first quick thing when hungry. I was in a sandwich rut a few months ago too.

dripdripdripdrip · 20/03/2023 17:33

Half a huge seeded wrap with guacamole, sun dried tomatoes and mozzarella, lettuce, cucumber and ham - I was using up things in the fridge. I'll probably have the other half for dinner as I don't feel like I can be bothered to cook.

APurpleSquirrel · 20/03/2023 18:27

I had half a tub of Yorkshire Provender Hearty Chicken & Lentil with butternut squash soup & some seedy bread & butter
I'll have the other half tomorrow.

Greentree1 · 20/03/2023 18:32

Left over from mother's day, blinis, peppered mackerel and salmon in sweet chilli sauce, the best bits all got eaten yesterday, but still nice.

Decafflatteplease · 20/03/2023 18:33

Ooo love a good lunch thread!

I had oatcakes with Wensleydale/apricot cheese, chutney. Some cold roast chicken and an apple.

Slimjimtobe · 20/03/2023 18:34

Poached egg and bacon and mushrooms

Baconking · 20/03/2023 18:36

Flatbread with houmous, rocket, roasted peppers and olives

bussteward · 20/03/2023 18:37

Fried tortilla topped with a fried egg, hot sauce, grated cheese, chopped avocado and chopped tomato, big heap of lettuce and some lime juice.

Often have black bean soup – cheap and easy to batch cook in vast quantities and freeze flat in sandwich bags so you can file them in the freezer – topped with avocado, tomato, cheese and tortilla chips.

Both are very filling and nutritious!

Bedbouncer · 20/03/2023 18:40

Two boiled eggs with a slice of marmite on toast 😋

ForestofBears · 20/03/2023 18:40

Houmous with tortilla chips (it comes together as a snack pack from Sainsbury’s).
Usually I have crumpets or toast.

limitedperiodonly · 20/03/2023 18:43

Have you tried beans on toast with grated cheese?

mynameiscalypso · 20/03/2023 18:44

A sandwich with leftover roast beef and some truffle mayonnaise. Amazing.

MrsAvocet · 20/03/2023 18:45

I had a toasted sandwich with tuna, cheese and sliced mushrooms in it, and then a yoghurt and an orange. Not very inspiring sorry! Besides sandwiches my other regular lunches are soup, boiled eggs, omlettes, or beans on toast.

mamaduckbone · 20/03/2023 18:48

Leftover Singapore noodles from Saturday night - always try to cook too much if it's something that will make a good lunch.

Newjumper2023 · 20/03/2023 18:48

I'm just as bad but I revert to a tea cake.

Xiaoxiong · 20/03/2023 18:49

Tomato soup and a ham & cheese sandwich!

Twinedpeaks · 20/03/2023 18:53

Reading this thread makes me realise why I'm fat 😂
