In need of inspiration, I'm annoyed with myself but I just keep reverting to cheese on toast if at home.

Toasted bagel topped with diced roast chicken, diced avocado and cherry tomatoes, mixed in a little Mayo , salt and a squeeze of lemon. Served with some salad leaves

If it makes you feel better I also default to cheese on toast when I have nothing inspiring in the fridge! But I fancied something tasty today and the fridge contents delivered.

Big plain yoghurt pot with a tin of mandarins stirred in. I drink the juice out of the tin with a straw! Sometimes an avocado or two with balsamic and sometimes two big macs from deliveroo!

Doro wat, an Ethiopian stew. Gousto always do really generous amounts of ingredients, so I've always got a stock of frozen leftovers for lunch. Mystery leftovers too if I can't work out what it is til it's defrosted.

St Agur cheese on crackers with cucumber and tomatoes. 2 home made mini egg cookies and a chocolate truffle - Mother's Day gift!

Tomorrow will be bacon, egg and tomatoes.

Tuna salad. With lettuce celery, grapes, red onion, grated carrot, sweet corn, celery, little gherkins and raspberry vinegar. It's was epic.

Yellow sticker ready meal bought for 80p and stashed in freezer. My new cheap way to avoid endless cheese sandwiches. It was chicken and green veg with wild rice, really good actually.

Also two bananas, an avocado, and orange and some biscuits.

One of those microwave bags of frozen rice and veg, fried with egg and cut up pieces of bacon and a dash of soy sauce and hot sauce. Really quick, relatively balanced and healthy and very tasty!

Some sliced pepper, carrot and cucumber sticks with guacamole and sour cream and chive dip, and a a handful of grapes. I don’t normally bother but that was leftover from yesterday.

I had honey and soy marinaded steak, potato salad, coleslaw, and roasted vegetables with couscous salad. Along with tomatoes and cucumbers, and blueberries, rasberries and stawberries.

Missed that you're after inspiration!

When I'm not stuffing myself with cake (Raspberry and lemon in case you're interested) I like soup and a roll, or a salad of some description. My favourite is cous cous, pomegranate and feta

I fried grated carrot and chopped up pepper with some cumin powder and bunged in a bit of mozarella. Toasted a pitta bread, spread with hummus inside and added the filling with a bit of siracha mayo.

Really uninspiring...salad with lettuce, cucumber, peppers and cottage cheese. Followed by a banana and a few pieces of chocolate orange.

I made scotch pancakes! There isn’t much in the house, but there is a lot of leftover milk, which I don’t use so this seemed sensible. I like them with butter and stewed apples.

I often make a bowl of grains and then top with ‘things’. Things like leftovers, chopped nuts, pickles. I generally try to find three things while the grains boil. Bulgar, quinoa, barley, all work.

It was delicious - and warmed me up which is handy as our heating is on the blink.

I have started buying or making the falafel from aldi and having it with some of those microwave rice and lentil pouches. I add salad and feta and it's healthy (then I have a packet of crisps and a chocolate bar to undo the good work!!!)
