What did you have for lunch today?

In need of inspiration, I'm annoyed with myself but I just keep reverting to cheese on toast if at home.

@Bree82 @Pseudonamed someone just messaged me to say that if you use other greens like kale and not spinach it's apparently called hortakopita which I didn't realise!

Sautéed onions, garlic, spring onions and then wilted down a mountain of kale. Mixed with half a bag of rocket, some sad dill/mint/parsley (the dregs of the salad drawer), feta, lots of grated nutmeg, some eggs and a grating of Parmesan just for the flavour, and then brushed olive oil over strips of filo pastry and folded them up into triangles, baked 30 mins for a lovely veggie lunch with a chopped tomato and cucumber salad.

Omg that sounds amazing!! :D
