Mince beef recipe ideas that aren't shepherds pie or bolognese

Hi
Just as the title states really.
I always batch cook with mince but I'm running out of new ideas.
I usually make shepherds pie, bolognese, chilli con carne, but we are all getting sick of the same thing so I'm looking for ideas please, preferably meals I can freeze too! Not asking for much am I?!

Tonight I made enchiladas using the packet mix, but used beef mince instead of chicken- they were delicious!

There's a Greek dish which seems to be similar to macaroni cheese which has minced beef in it, I think it's called Pastitsio or something like that and there's a South African minced beef dish called bobotie which has fruit in it too.

Enchiladas? Although similar to chilli.

I make keema and moussaka, both are technically meant to be made with lamb but I usually use beef.

Meatballs, I make a big batch & freeze them so they can be easily separated. Then transfer to a big bag. Can bake or fry them (gently).

It's a bit Bolognese-ish but I like hello fresh's "porky penne" - pork mince Ragu with cheddar and wilted spinach.

I also like to make meatballs either with a tomatoey vegetable sauce (I slow cook and shove a few cubes of frozen butternut squash or sweet potato in to help thicken it up) or to have with mash and veg I do a bacon, red onion and redcurrant jelly type gravy.

I make a type of stroganoff with mince and blue cheese (and onions, mushrooms and crème fraiche).

We really love it.

Korean food uses quite a lot of mince. And it's usually fairly quick. It's generally pretty spicy though!

I make a really nice spicy mince:
fry down the onions and garlic
add mince
add spices: turmeric, ginger, cumin - sometimes paprika if I am feeling fancy
plus tinned tomatoes + puree
frozen spinach + salt and pepper
chick peas
simmer to perfection

I make a big bolognaise in the slow cooker, batch it up, and then use it to make:
-enchiladas, pop the mince in wraps, then put passatta under them, a bit on top of them, sprinkle mature cheddar and bake

  • shepherds pie- if I also have mash to defrost
  • mince, and make dumplings to bake on top
  • pastry on top to make a pie
  • lasagne
  • slice some potatoes pop on top and bake as a hotpot
  • turn it into a chili
  • mix with cooked penne, and bake with cheese on top
  • spaghetti bolognaise

I make a sort of Chinesey dish - usually with pork mince but works with beef too. Fry a finely chopped onion with some garlic and ginger until onion is softened. Add mince and some 5 spice powder and brown. Add a load of grated carrot, tin of sweet corn and half a cup of dark soy. Simmer for 15 minutes and serve with rice.
