DH and I both WFH most days. I am bored of soup, sandwiches and baked potatoes? What else can we eat that doesn't require massive prep or money and tastes nice? What do you have?

Omelette
Cous cous and roasted vegetables
Scrambled eggs on toast
Poached eggs on toast
Gnocchi or filled fresh pasta
Falafel (ready made)

Mammyloveswine · 22/01/2023 18:29

Cous cous salad, pasta salad, leftovers, salmon, rice and veg, chicken wrap, charcuterie plate, pate on crackers, toasties..

ComeTheSpringLobelia · 22/01/2023 18:30

I really like pizzas using tortilla wraps as the base. I particularly like them with avocado and mushrooms on them.

Showersugar · 22/01/2023 18:31

Lots and lots of toast

Knitily · 22/01/2023 18:32

Often leftovers from the night before, or a quick miso soup. Sometimes I'll make a big batch of pasta salad or similar and eat it throughout the week

RachelGreensHair · 22/01/2023 18:33

I always make extra in the evening and have left overs with salad the next day.

CMOTDibbler · 22/01/2023 18:34

I often make a big pot of something on Monday (prep veg on Sunday) and eat it all week with small variations. I like dahl with butternut squash, courgettes, peas, carrots, then one day I have it with brown rice out of the freezer, another microwave a couple of poppadoms, on a jacket, or thin into soup. Last week I made lentil chilli (and lots of veg) and had that with cauli rice, tortilla chips, with some quorn chunks on different days

TokyoBouncyBall · 22/01/2023 18:48

Eggs are a good idea, as is dal. But mostly I am thinking that I would like to come round to yours as it all sounds delicious

Poached eggs on toast, or spinach.
pack of noodles with sweetcorn or peas or last nights chicken in.
Mushrooms on toast.
Soup in many varieties.

SomeCommonThing · 22/01/2023 18:50

Chips butty.
Veggie burger in a bun with salad.
Cheese and pickle in toast.

RoseyLentil · 22/01/2023 18:54

Baked potato with beans and a huge mixed salad 🥗 mmmm

disconnecteddrifter · 22/01/2023 19:01

I have kale tossed in oil with garlic and chilli flakes and salt, oven for 10 mins. Add tomatoes, baked tofu, boiled egg, red onion.

Cuppasoupmonster · 22/01/2023 19:03

Porridge with a handful of blueberries
Ciabatta and Red Leicester roll (current pregnancy craving) with coleslaw and plum tomatoes or some other piece of fruit
Scrambled egg on crumpets
Pasta with pesto cheese and sweetcorn

AtleastitsnotMonday · 22/01/2023 22:23

The reason I'd like to wfh is the fact that it gives you lots more lunch options!

On toast...
Beans
Egg
Garlic mushrooms
Mashed avocado
Cheese
Tomatoes

Or a toastie!

Falafel in pita
Tuna pasta
Fish finger wrap
Quaesidilla

TheChosenTwo · 22/01/2023 22:26

Sometimes I fire up the toastie maker but more often than not it’s leftovers or just pick at random fridge stuff as and when im hungry. However this usually means that I just eat some slices of deli meats, a yoghurt and maybe some crisps/biscuits throughout the day rather than sitting down for a proper meal.
Also, dh sometimes nips home for lunch and makes a soup which is quite handy because then something is made and ready. I’m pretty lazy when it comes to food, I love it but rarely make the effort when it’s just for me.

KatieKline · 22/01/2023 22:36

Tomato soup and a cheese toastie - I know you said you are tired of soup and sandwiches, but it's so delicious.

Noodles with leftover Sunday roast meat
Tuna pasta
Omelette or fritatta
Cheese and beans on toast
Fishcakes, chips and peas
Homemade quick pizza - just sliced sandwich bread toasted one side then turn over and top with tomato puree and cheese and ham etc on then toasted.

We home ed, so we're all home usually for lunches, unless I'm in the office that day

pornyshroudofturin · 22/01/2023 22:36

Big field mushrooms covered in garlic and baked in the oven. When they are nearly cooked, fill with a bit of tomato sauce (pizza type not ketchup!) or cherry tomatoes, and cover in cheese. Finish off in oven or under the grill. Lovely with salad.

LadyGaGasPokerFace · 22/01/2023 22:38

I have a toasty maker.
Also like poached eggs on toast.
Failing that I bung a curry Pattie into the oven.

DelilahBucket · 22/01/2023 22:44

I tend to have leftovers. I cook extra in an evening for this reason.
I also have eggs on toast, soups, Heinz spaghetti/beans and sausage or sandwiches. In summer I have salads.

thirdistheonewiththehairychest · 22/01/2023 22:48

Leftovers!!

blondieminx · 22/01/2023 22:53

I make soup on a Sunday and have a mug alongside something else so I’ve got some veg in, in the laziest way possible!

this week I will have:
leftover Mac n cheese with salad
spinach tomato & cheese omelette
cheese toasty
salad nicoise

Paddingtonthebear · 22/01/2023 22:55

I had the same problem. Was so bored of sandwiches. I’m now mixing it up and I just prefer hot food in the winter. Along with jacket potato and soup, I have reheated dinners (like lasagne), noodles in a pot (big soba or naked brand), open falafel wrap with various salad bits and yogurt on top, pizza bread, pasta salad, hot sausage roll, omelette, fishfinger sandwich, New York deli style
bagel,but toasted.

Paddingtonthebear · 22/01/2023 22:57

Also pitta bread with houmous and some salad, the quick cook tortellini, cheese on toast, egg fried rice, chicken dippers in a wrap with sweet chilli sauce 😆

evemillbank · 22/01/2023 23:00

I always either have soup or cheese and crackers. But I'm too lazy to take time to make something..I just went to get my hours done and finish and collect my children from school

caringcarer · 22/01/2023 23:01

Omelette
Toastie cheese and ham
Leftover dinner from day before
Scrambled eggs on toast
A wrap
