If you work at home, what's for lunch ? I am bored of mine

DH and I both WFH most days. I am bored of soup, sandwiches and baked potatoes? What else can we eat that doesn't require massive prep or money and tastes nice? What do you have?

Leftovers feature heavily here, today is sweet potato and chickpea curry.

Jacket potatoes I get the frozen ones that take 5 mins to cook. With tuna, leaves, avo usually.

Soup either homemade (I make a batch in the slow cooker and freeze) or just a tin.

Aforementioned toasties, still using up the Christmas cheese here so these are a regular feature at the moment.

Quesedilla with leftover taco mix is easy.

Fritatta I'll make a big one to do 2 days.

Occasionally I'll go to the local deli for a panini, little treat, get some fresh air.

I also like to roast a big batch of butternut squash and sweet potato then pop in fridge. Then this can be stirfried and add in any leftover bits of chicken or sausages, some spinach to wilt and top with an egg. A twist on bubble and squeak.

Occasionally pancakes, super easy and pretty cheap although not the healthiest!

Cherry yoghurt with musli, raisins, mixed nuts and berries. Absolutely amazing every single time.

I have

leftovers from the weekend
something involving eggs - omelette, eggy bread or scrambled
soup, I batch cook & keep portions in freezer
avocado & chilli flakes on crackers - sometimes with prawns or feta
Stuff that needs using up eg yesterday i had the end of a jar of roast peppers that needed finishing and some goats cheese so made a quick pasta sauce with those
Pate crackers and veg
Tricolore salad (more in summer)
Lentil stew - I cook up a batch and freeze portions

Actually falafel are a good call, forgot about those. I buy a pre made mix and make them up then freeze. They defrost really quickly.

I just had tuna, cherry tomatos, lettuce, beetroot and aldi french lentils in a sachet. I called it a buddha bowl to make it fancy.

My only tip would be: lots of butter! Not the healthiest but oh so delicious. I had done Gruyère left over from a recipe and it was just lovely in an air fryer toastie.

I've just been grazing today, had an apple, a babybel, some left over chicken from the fridge, some pitta chips with humous, a piece of shortbread, just went to go and get another snack and stopped myself, being at home with a full fridge and no plan is dangerous 😁

I am also getting the idea that buying a toastie maker might be a good idea...

I don’t have a toaster maker , well I might have but it will be right at the back of the bloody awkward cupboard. I make toasted sandwiches in a frying pan. Use frozen bread, put butter on the outside then fill with whatever you want, I like Mayo, cheese , finely sliced onion and tomato . Cook in the hot pan, squish down a bit with a utensil then turn over half way.

And don’t forget eggy breads. They are like Proust’s madeleines for me.

in the summer I make courgette fritters, grate the courgette and squeeze out some of the excess water, add a beaten egg, chilli flakes, ground pepper, and a spoonful of flour. Make into little fritters and fry until brown. I then make a tomato sauce with ripe fresh tomato, fresh garlic , seasoning, olive oil. Use a stick blender to blend together until smooth.

Fish finger wrap with tartar sauce and lettuce.
Chunky soup (love one made from onion, garlic, tinned tomatoes/passata, peppers, courgettes, smoked paprika and chorizo) and cheese on crackers.
Quinoa with goats cheese and roasted veg.
For ease I love the little pots of smashed avocado from Lidl/Aldi (about a quid) on toast with a couple of poached eggs.

Grilled red peppers and halloumi, chili oil, on toast.

Spinach and mushrooms, toast.

Tomatoes, feta and olive salad, toast, (extra olive oil on toast)

Hummus, sweet pickled chili beetroot, tabasco on...... toast...

Toast is life.

I made a very quick and easy lentil soup today (onion, garlic, ginger, red lentils, stock, tin of tomatoes). I often do a salad bowl type thing with random stuff from the fridge- Most recently have been buying mackerel and feta and salad leaves and will often have that with one of those microwaveable rice/lentils packets. Other than that, jacket potatoes, a sandwich with a few crisps if I'm feeling boring.

Today was a bacon roll, as husband is home.
yesterday was crackers cheddar apple and grapes
Most days is a ham and coleslaw sandwich with a bag of ready salted crisps.

I often have a ham and lettuce sandwich with mustard but my favourite lunch is humous on toast. Often with sliced tomatoes on top. I prefer the spicy humous from Asda. I think it has red chilli flavour. V. tasty.

Actually the Asda humous is red pepper with chilli flavour. Reduced fat.

I make a huge vat of Random Nutritious Soup and then have that through the week, sometimes with something more interesting added (chilli, cheese) but often just with different bread/toast. In summer I switch to smoothies. I actually quite like having more or less the same thing for lunch every day.

I have the Toastabags from Lakeland that go in the toaster. They work really well.

I eat a lot of eggs at lunchtime, boiled, scrambled, poached and today had yesterday's leftover curry.
