If you work at home, what's for lunch ? I am bored of mine

DH and I both WFH most days. I am bored of soup, sandwiches and baked potatoes? What else can we eat that doesn't require massive prep or money and tastes nice? What do you have?

I just bought a toastie maker for this reason. I was fed up of cold sandwiches.

Wraps with felafel, houmous, grated carrot, sliced peppers and tomatoes and sweet chilli sauce.
Bagel with thickly spread Philadelphia, green pesto and avocado (fav)
Frittata with onions, peppers, courgette, cherry tomatoes, crumbled feta and drizzled with pesto.
Frittata with mushrooms, leeks and cheese,
Or if I really can’t be arsed:
Beans on toast.
Cheese and onion crisp sandwich.

I love the days I work from home because I can have a hot lunch. Things like scrambled eggs on toast or a toastie (I've a sandwich maker at home). Some days I have a toastie with tuna, mayo, onion and cheddar. Other times I have a toastie with cheese and relish. Much nicer than a boring sandwich, especially on a cold, winter day.

Eggs - various (boiled, poached, scrambled, mashed in a sarnie)
Things on toast that aren't eggs - beans, spaghetti, cheese, pate, humous
Toasties - quite a few options there
Leftovers - numerous options
Plus the soups and sandwiches that you've said you are fed up with

I always have the same. Flatbreads warmed in toaster with hummus (vary the flavour!). Then a pink lady apple or some blueberries. After reading this thread going to try eggs of some sort next week!

Just out of curiosity, is a panini/cafe press style toastie maker better or one of the ones that creates the sealed triangles?

We have both @afty (inherited the one that makes sealed triangle after my parents died many years ago).
I do prefer the flat one - mainly because it is so much easier just to wipe clean, but also because it just copes so much better with different sizes and shapes of bread.

I make an effort to cook extra food and freeze leftovers so I always have something good to eat, particularly in winter when I want something warm. Today I've had butternut squash, chickpea and harrissa filo pie - in the freezer there are a couple more portions of this, some dhal, thai green curry and spanakopita. I alternate with sandwiches, avocado on bagels, mushrooms on toast etc.

Im on a diet so I had a totally unsatisfying low calorie ready meal, but my favourite lunch is American style grilled cheese with chilli chutney.

Veggie fajitas
JP with chorizo, pepper, tomato, mushroom and courgette sautéed and topped with cheese
leftovers from dinner, usually spaghetti bolognese, pasta bake, chilli, curry.
tuna pasta, I add cucumber, pepper and onion to mine.

I just make the same sandwiches I would if we going into the office mostly. However, we’ve started having soup and bread and butter, cheese on toast and also crackers and cheese two.

Boiled egg and soldiers.
Slice of quiche and some salad.
Cornish pasty.
Cheese and crackers, with chutney and grapes.
Toast and pate.
Slice of gala pie from the deli.

Leftovers normally.

I baked ham yesterday so lunch today was cold ham, salad, cold roast potatoes and pickles. 😊

A quick fave:
Make individual packet of flavoured instant noodles - I like the chicken or the spicy ones
While they are softening, steam some veg in a steamer - could be mangetout, baby sweetcorn, carrots, spinach, broccoli etc, whatever you like
In the boiling water in the pan under the veg, boil an egg
Put noodles in a big bowl, put steamed veg on top, slice egg in half and place on top - add soy sauce if you like
Enjoy your quick, colourful, tasty lunch!

I often do that Tik tok egg wrap thing
Omelette with two eggs, put a wrap on top, flip so the wrap is on the bottom of the pan. Add cheese/ham/whatever and fold and cook until it's brown both sides
Good for using up scraps of tomato, spring onion etc

Yesterday I cooked beef casserole and mashed potatoes specifically for my lunches this week (need 4 days). I did extra veg while cooking dinner to have with it.

Today I had two clises of toast, spread with mashed avocado, topped with fresh tomoato and then 'plastic cheese' - the cheese singles you get. Under the grill. Very nice.

Today I had some leftover curry which I cooked yesterday. Most of my lunches are usually leftovers from the night before. But if no leftovers around then I'll often do fish finger sandwiches, avo on toast with a fried egg, noodles, cheese toastie, cheese and chorizo quesadillas, pasta alio & olio (garlic and olive oil pasta - sounds fancier in Italian), scrambled egg and toast. Definitely the best part of not having to commute to an office is having more choice for lunch.

Every week I make a big pot of sweet red pepper and tomato with a fresh chilli. Served with toast and Creme fresh. Delicious

Thank you, we did go for a flat one even though the triangle one would have given me a dose of nostalgia every lunchtime!
