DH and I both WFH most days. I am bored of soup, sandwiches and baked potatoes? What else can we eat that doesn't require massive prep or money and tastes nice? What do you have?

I often make a toasted sandwich in the air fryer and use my soup maker 2-3 times a week, which is really handy for using up any vegetables lurking in the bottom of the fridge.

When I used to wfh I would have a Brie and onion chutney panini most days! Or tuna mayo panini x

I have leftovers so curry, roast chicken or whatever.

Or smoked mackerel and salad, steak and veg, halloumi and avocado, or today was bacon and eggs.

Scrambled egg (made in microwave) on toast with spinach, peppers, mozzarella and Siracha sauce

I do like salmon pasta sometimes.

Bury a small pack of smoked salmon. Cook pasta for one then add a big handful of rocket, lemon juice, shredded smoked salmon , black pepper and a small dollop of olive oil. Give it a stir and it's done! Very fresh tasting and takes 10 minutes

The Hairy Dieters Breakfast makes a lovely lunch too Wink

I make a couple of big pots of soup each week so pretty much soup, humous & crackers or bread. This is usually followed by several biscuits😁
