Amazing hotel for DHs 60th. Help??

DH has no idea what he wants to do for his 60th. He loves a great boutique hotel, fabulous food, lovely scenery and walks. We can go anywhere in the UK. We live in the east of Scotland and would like to go further afield. Not Edinburgh. He works there and it wouldn't be the right vibe for his special birthday. Not London either. We are going there in May for things he booked for my 60th. His birthday is October. Any ideas?

Chateau Rhianfa in Beaumaris is very nice. Very high-spec but quirky rooms (when I stayed there, we had a circular bathroom that was in a turret) and it's close to some fabulous scenery and walks. The restaurant serves lovely food too.

We went to visit Chatsworth in 2021 and it was so beautiful.
