What should I do with an avocado?

Looking for inspiration with what I can do with an avocado. I know I can have it on toast but wondering what else I can do with it?

I love a deliciously Ella baked avocado recipe. It has pine nuts, sundried tomato, roast tomatoes etc in it. Everyone I have made it for has loved it.

Mashed with some vinegarette on top of a kallo beetroot and balsamic rice cake

On sourdough toast with marmite

guacamole

in a pita with cream cheese, sun dried tomatoes and olives

Serve half an avo sliced with two boiled eggs cut up and all sprinked with salt and pepper, squeeze a bit of lime or lemon juice on the avo. Yum and filling. Perfect brekkie. (Its a fast 800 recipe btw).

Mash it with feta cheese and chilli Flakes. Spread on sourdough toast and top with a poached egg. Add some chopped cherry tomatoes too.

Or, if you're ds2, cut it in half, remove stone, eat with a spoon.

I realise it is on toast, but you can't beat an avocado sliced onto buttered toast, topped with a poached egg and sprinkled with coriander, pepper, salt and chilli flakes.

Just a grind or two of salt and some balsamic vinegar is all they need. With, rather than on, toast.

caesar salad with chicken and avocado (using the Cardini dressing)

English mustard on toast, mashed avocado, pepper and chilli oil

in a tuna salad with finely chopped broccoli, curry power, nuts etc

Haha no tho family legend says I did as a child.
The ones at work are usually smallish tbf. Genuinely puzzled as to why this is odd as I have eaten them this way for years. Otherwise with tomato, cucumber, red pepper and cold chicken.

Ooh loving these recipes. So far I have been a bit boring with my avocado just having it on toast with a little salt, which is delicious. But I knew there were more exciting things to do with an avocado.

you can slice peel and it eat it like a great number of fruit or vegetable. people mess with good food too much. Delicious, no need to mess about with it.

We call this the millennial mortgage. It’s my favourite quick tea. (I swap,the coriander for pine nuts though)

Make Guacamole, serve with nachos and salsa (made too or just buy some)

Guacamole is easy, mush your avacado up with lemon juice, salt n pepper, - plus chopped chilli optional.

Very finely sliced or chopped red onion 1-2 tbsp per half depending on taste, chopped ripe tomatoes, fresh coriander including finely chopped stalks, lemon juice (or lime) salt and pepper (arteries, schmarteries), liberal squoots of green Tabasco sauce (it’s mild, zesty and delicious), sliced, chopped or smooshed avo.
Corn chips, toast or a spoon. Can eat aside a nachos with margaritas or Palomas for the best day ever. (Going off to make this for breakfast now sans cocktails.)
