What should I do with an avocado?

Looking for inspiration with what I can do with an avocado. I know I can have it on toast but wondering what else I can do with it?

Throw it at the neighbours? I've never found a better use for them. Awful inventions.

I was brought up in France where we ate them:
cut in half
Fill well with maple syrup
Eat with a spoon

Delicious, I had no idea avocados were a savoury food (other than Mexican) until I was in my twenties.

I love it as avocado salad with herb dressing (an Emily Nunn recipe). The dressing has extra virgin olive oil, a bit of red wine vinegar, garlic, spring onion, jalapeño, and lots of fresh parsley and coriander. Delicious!

Make it into ice cream. The addition of condensed milk really takes away that holier than thou vibe they usually have 😋

I fry red onion with chorizo slices in olive oil then pour that on top of mashed avocado (on toast 😬). If I can be bothered I add cubed fried potato too.

It is very yum 😁

Condensed milk not vegan ( I know you'll probably know this already, just saying in case you don't or others might not) Nestle do a tin of vegan condensed milk though so could use that 😍

'Leon' style halloumi and avocado muffin:

Toasted English muffin spread with chilli mayo (I mix regular mayo with a squeeze of chilli purée)
Couple of slices of pan fried / grilled halloumi
Sliced avocado

Delicious!!!

Mashed avo
Sea salt
Drizzle of olive oil

I baked one the other day with an egg in the hole where the stone was. Why bother, was my response? I added seasoning - shouldnt have bothered. The partly cooked avocado had no flavour at all. Would have preferred it raw.

I eat either an avocado or a grapefruit about once a week followed by egg on home made white ciabatta toast. The rest of the week it's cereal or porridge. With avocado I mash it with a heft fork or sometimes the potato masher if it's not amenable to the fork - add a tea spoon or so of dark soy sauce and 4-5 splashes of tabasco - and give that a quick mix. I don't like pureed avocado - roughly mashed is fine for me.

Quick avocado dessert:
Roughly chop, sprinkle with instant coffee (nescafe), add condensed milk to taste and mix it all.

Avocado milkshake:
Blend avocado + milk + honey/condensed milk.

I've just remembered a sandwich I made for a hike DH and I did before we had DC. It was th enicest sandwich I've ever had and I haven;t made it in years.

Crusty ciabatta roll. Avocado on either side instead of butter (mashed or sliced) with a sprinkle of lemon juice, salt and pepper. Then strips of parma ham, small heap of rocket in the middle with some slices of heritage tomatoes.

A I can’t believe nobody’s mentioned a BLOAT!!!

Toasted baguette and wrap in grease proof paper. Bring some avo mushed with salt, pepper and a dash of olive oil in a box. Spread thickly on one slice of the baguette. Then sprinkle with thinly sliced brown pickled onions and rounds of perfectly ripe tomatoes. Crispy lettuce of your choice and crunchy bacon. Slam the lid on the baguette and slice to suit.
