What do you eat when you want something light and fresh tasting?

I go through phases where I have very little interest in food but I know that I have to eat something. I feel like light, fresh meals would be more appealing but besides my usual hummus vegetable wraps, I can't think of many.

Any suggestions would be appreciated TIA.

At this time of year, English asparagus, a few steamed Jersey Royals, a boiled egg and some aioli. Sometimes a couple of radishes, too.

Lunch - fresh mozzarella sliced with heritage or beef tomato, and balsamic vinegar and olive oil drizzled over.
Dinner - like a previous poster, poached salmon, new potatoes, asparagus.

I came on to say exactly the same. Salad with low fat feta, watermelon, lettuce, cucumber and mint. You can also add baby plum tomatoes, olives and spring onions.

I also love fennel and blood orange salad with mint, olive oil and balsamic vinegar.

Or heritage tomatoes with fresh thyme and sea salt. Have with sliced avocado and crusty bread if you need more calories.

I love starting the day with greek yoghurt, frozen blueberries or raspberries (or fresh ones), chopped walnuts and honey.

I was about to suggest watermelon and see someone already has.

Poached egg and rocket.

Rocket salad.

Stir fry with those thin noodles not the thick ones that are also yummy but more stodgy.

A whole mozzarella with loads of sliced good quality tomatoes, some salt flakes, a few fresh basil leaves a drizzle of olive oil and a bit of balsamic vinegar. Some sliced red onion as well if I want to zing it up a bit.

Or two boiled eggs, cut in half, dollop of mayo some and some smoked paprika.

pate on toast

Baked goats cheese with red onion marmalade (fry red onions in butter, add a dollop or marmalade and cook until sticky), I'd usually add a tomato salad on the side.

Roasted Cauliflower with garlic.

I make little flatbreads by mixing equal amounts of natural yogurt and flour and dry frying them in a non stick pan. I then dip them in whatever dip I've made.

Boil a pan of new potatoes at the start of the week and keep in the fridge. Use a couple either just cold as part of a salad/ potato salad or reheated by frying/ grilling. Really lovely with a piece of fresh mackerel or seabass.

A vegan cook friend has a great recipe for “chickpea of the sea” tuna-less sandwiches: theveganlarder.com/chickpea-tuna-sandwiches/

I’m not vegan and texture-wise, the comparison with tuna is scanty - but they are fresh and zingy and delicious, and the mix is also great as a salad accompaniment or topping for nachos or baked potatoes.

I like squid rings, chorizo and hummus when I want tasty but not hungry enough to cut up loads of stuff.

Couscous with lots of fresh herbs, tomato, lemon juice and either feta or fish

granola with or without added Brazil nuts
topped with kefir or Greek yogurt

small plate with chunks of cheese, maybe a few mixed nuts, mini vine tomatoes

tiny portion of leftovers (I deliberately make extra at main meals)
for example I do extra chicken marinated in lime and ginger
put the extra sliced in a wrap

crackers with pate or snacky cheese

fruit or veggies as a snack or addition. Love whole mini beetroot

bagels

one slice of toast with one poached egg. Or one potato waffle topped with egg.

mushrooms gently fried in butter

Mine is fresh tomato [home grown are best of course] sliced, and salt and peppered. Then placed on a slice of bread which is buttered, a dollop of mayo on top, and another slice of bread on top.

We had it today. Gorgeous.
