What do you eat when you want something light and fresh tasting?

I go through phases where I have very little interest in food but I know that I have to eat something. I feel like light, fresh meals would be more appealing but besides my usual hummus vegetable wraps, I can't think of many.

Any suggestions would be appreciated TIA.

I made a lovely mango salad with lime dressing that I saw on Instagram. There is a great site called healthy food addiction.

Does a mojito count?

Does together defeat the object?

Love a good tuna Nicoise!

valerianaofficiana · 06/06/2022 19:14

I make wicked guacamole, can eat it on its own.
Grated vegetable salad, like coleslaw but no onions or mayo/creamy dressing, simple French one instead.

Veggie sushi with pickles

Cubes of cheese, radishes, celery, pickled onions, pickled cabbage, crackers or good bread

A bowl of thin lentil soup with lots of lemon juice and coriander

HollowTalk · 06/06/2022 19:48

Sliced avocado, feta cheese and cherry tomatoes. You can add a bit of salt and pepper and some fresh coriander if you have any but it's lovely just as it is. I have it with fish and with chicken and sometimes just on its own.

ImplementingTheDennisSystem · 06/06/2022 19:54

One slice of sourdough toast with a mashed hard boiled egg on top and loads of salt

Ooh or a calipo

These just go too far I find. Nothing worse than having solero soup the next day or cold calipo and pickles.

I prefer just a plain ice cube, preferably from Waitrose as those from other stores tend to have added water. I also squeeze a small slivver of watermelon over it to give it a dash of flavour.

FindingMeno · 06/06/2022 19:59

Greek salad
Chopped apples, grapes and cheese
Ahold tin of sweetcorn
Sorbet

EnglishGirlApproximately · 06/06/2022 20:04

I also came on to say watermelon, feta and mint salad but I see i was beaten to it on the first post! It has the bonus if being the only salad that DS will eat without looking like I'm trying to poison him so we have it fairly often in summer.

NervousFlyer2022 · 06/06/2022 20:05

I agree - go greek - cucumber, feta, red onion, tomatoes, lettuce and some olives with tzatziki or sour cream and onion dip. With a bit of olive oil and balsamic.

Less ritzy things include corned beef on soft white bread with real butter and a drizzle of tomato ketchup. The small Warburton's loaf is the same side as a packet size slice of corned beef! Ritz Crackers dipped in Philadelpia or soft cheese is nice too. And Marmite on toast.

I'm exactly the same - frequently can't seem to face a big meal but get hungry so smaller options are more manageable x
