What do you eat when you want something light and fresh tasting?

I go through phases where I have very little interest in food but I know that I have to eat something. I feel like light, fresh meals would be more appealing but besides my usual hummus vegetable wraps, I can't think of many.

Any suggestions would be appreciated TIA.

Avocado on toast with feta and tomatoes. Lots of salt and pepper and a bit of lime

Also a carton of natural yoghurt with some tinned fruit is lovely. Can put some nuts in too. Crunchy sweet and with a bit of protein too with the yoghurt.

This.

Or poached egg on toast, with asparagus if in season.

Pennyhill22 · 06/06/2022 20:11

Mozzarella, tomatoe with salt and drizzled with olive oil.

These just go too far I find. Nothing worse than having solero soup the next day or cold calipo and pickles.

I prefer just a plain ice cube, preferably from Waitrose as those from other stores tend to have added water. I also squeeze a small slivver of watermelon over it to give it a dash of flavour.

A whole Ice cube ! wow , you have a healthy appetite, i suck one for 30 seconds then put it back in the freezer for the next meal . LOL 😂🍴

Thehonestybox · 06/06/2022 20:40

White rice and roasted courgette/peppers

RinklyRomaine · 06/06/2022 20:40

I made a lovely mango salad with lime dressing that I saw on Instagram. There is a great site called healthy food addiction.

Please could you link to this?

If I don't much feel like eating then I certainly don't feel much like preparing food, so a sliced apple with some cheese fits the bill for me. That's all I need. The apple provides crispness and crunch, tartness and sweetness. The cheese provides the salty creaminess and the denser texture. Nothing else is required for me.

RemusLupinsBiggestGroupie · 06/06/2022 21:05

Speaking of cream cheese:
cream cheese
sweet chilli sauce
shedloads of coriander
To be eaten with tortilla chips to dip

ChazzaGirl · 06/06/2022 21:27

Yoghurt and honey or yoghurt and berries.
Walnuts, cheese and gherkin.
Mini-milks! I could eat a box of these in hot weather.

myuterusistryingtokillme · 06/06/2022 21:45

Melon and Parma ham

Rainbowshit · 06/06/2022 21:47

Hot salmon, pink grapefruit and Rocket salad.

This is amazing: www.thekitchn.com/appetizer-recipe-pomegranate-olive-relish-recipes-from-the-kitchn-181181

JamieFraserskiltspeaksout · 06/06/2022 21:48

Bruschetta - ciabatta, diced cherry tomatoes, garlic, basil, olive oil and balsamic. I could eat it everyday.

Simonjt · 06/06/2022 21:51

Miso soup with pak choi, yummy snack.

Titsflyingsouth · 06/06/2022 22:02

Salmon steak with a salad or edamame beans, rice and soy dressing.

JennyForeigner · 06/06/2022 22:06

Scramble minced tofu and aubergine with veg and Asian flavors, wrap in Vietnamese rice pancakes and dip in extra sauce. Delicious!

My dad's tip for veggie food is to include chopped cashews or nuts for texture. No heavier, but adds another dimension.

ThreeApplesHigh · 06/06/2022 22:06

Thank you all. These all sound incredible and exactly what I'm looking for. I'm looking forward to trying them.

@RinklyRomaine - do you have a recipe for apple and celeriac slaw? That sounds gorgeous.
