Or am I the only numpty that didn’t realise the shops would be shut and had to make a mercy dash around various local stores to get anything for today?!

Where in England is Easter not a special occasion?

If you mean that it's not special to you that's not relevant to trading laws.

Yes that’s exactly what I mean, Easter Sunday is not a special enough occasion in my house to warrant special lunch or anything or make me realise for a moment the shops might have different hours

I was stopped by a man this morning who wanted me to confirm the supermarkets were all closed today. I said yes but they were open tomorrow. I pointed him in the direction of one or two local off-licences and corner shops. He was carrying a number of empty carrier bags so I got the impression he too had been caught out.

I live very close to an ex-Homebase store which has now been rebuilt as an Aldi. Every Easter Sunday, throughout both tenancies, I've seen umpteen frustrated/inconvenienced/pissed off people realise the place is closed. Sometimes, the displeasure has been quite vocal and sweary!
