It’s only 10am but I’m quite excited for tonight’s dinner as it’s a new dish I found - fish finger katsu curry with rice & green beans. Followed by dairy free chocolate fondants with vegan strawberry ice cream

Love the idea of fish finger Katsu. We often have (veggie) chicken nuggets with ours. I don’t know why I’ve never thought of fish fingers.

We’re having kale and potato curry. I haven’t decided whether to make a sauce or use a jar yet.

We are having a cold platter today as I am out this evening. So spinach tortilla, ham, boiled eggs, sundried tomatos, dips and crudites.

I wish we could have a takeaway, but we can’t 😭😭 - we’ve spent the day painting our living room and we’ve not thought about dinner at all, which means we’re stuck now because all our meat is frozen and we’ve totally run down our batch cooking dinners stock. But there aren’t any nice takeaways here at all. 🙁🙁

I might do a very easy pasta - Linguine with king prawns and a umami strut-through sauce from a jar. Actually yes, that’s what we’ll do. With a glass or two of Sauvignon Blanc.👍👍

If you're not a spice lover, would recommend you go slow with adding the gochujang Smile It doesn't end up mad spicy anyway but some people aren't gochujang lovers.

Then you can just play about with it! I like mine with loads of sauce so I add in a bit of cream but no mozzarella. Or you can use up bits like spinach in it. It's a handy one.

Turkey stroganoff with rice.
I used lots of whole grain mustard and quark instead of double cream.
Tasty.

But if I had a warm oven that needed taking advantage of I would:

  1. Assemble some lasagne for the freezer with jar sauce and microwaved bechamel.
  2. Whip up an easy yoghurt cake with whatever bits I’ve got (nuts, choc chips, apples, sultanas) to make it interesting, for breakfast or lunch boxes.
  3. Put in some potatoes to bake and keep them for a quick meal later in the week.
