I would like to try to start a project of getting my 10-a-day of fruit and veg in every day.

Anyone fancy joining me? I find groups on here of support so useful.

I know lentils and beans and chickpeas are part of it too so I will up them. I'm vegan so I'm hoping that should make things easier as I eat lentils as part of my diet anyway.

This thread is for everyone who would like to focus on 'eating the rainbow' as part of a healthy lifestyle.

Or anyone who does this already who has any hints and tips?

The mixed berries weren't in the pasta sauce of course. Grin I just needed to put those together to make a full portion.

The recipe for the berry bars did look good, glad they lived up to it.
Lentil and roast veg soup sounds like my kind of autumn dish.

Yesterday:
1 beetroot
2 shallots, mushroom, ginger
3 steamed cabbage
Plus a tiny bit of carrot.

And that was it.
Anyway the cabbage, (local Savoy with purplish outer leaves) was so fresh and delicious I'm looking forward to chopping up and the remainder tonight. I forget how much I love cabbage!

I love cabbage too. The darker the better.

Well, we have finally used up all our food. Some soup portions left in the freezer for next week and a couple of things in the cupboards but we are pretty much out. It's been great tk gave a clear out and we have eaten well but I am looking forward to having fresh fruit in my fruit bowl and veg in my fridge again.

Again, today surprised me. It may look high but it definitely lacks fresh veg and fruit.

  1. Prunes ( in porridge)
  2. Dried cranberries
  3. Tomatoes as a snack from the greenhouse
  4. Spanish beans
  5. Mixed Veg pie thing
  6. Dates (bliss balls)
  7. Mixed veg - peppers, onions, kale and olives (on 2 slices of pizza) maybe half a portion?
  8. lentil chilli/kidney beans/refried beans

Yesterday not so good as had stomach problems Thurs night and didn’t feel too good. Think I have an intolerance to an overt amount of garlic, which is a real shame.

It's horrible when something you enjoy, especially when it's something that is good for you, doesn't agree with you.

I'm allergic to oranges and really miss them, and orange juice. I always feel like stamping my feet "but...but..they look so delicious and smell good...and they are good for you!"

Yay. Well done.

I made a Sunday lunch today and went heavy on the veg. Then baked cinnamon plums for afters which I loved but they didnt go down so well with my fussy family. Which is a shame because I am trying to have sweet things that are fruit based and home made rather than processed rubbish.

Hey ho. I'll make them sometimes for me and ds who liked them and try something else.

I'm trying to think what we can have as a light supper since we've had a heavy lunch. Everything I think of doesn't seem so veg based.

So far I have had...

  6. Peas, Brussel Sprouts, roast patty pan squash
  7. Stewed Apple and Plum

So, spinach isn’t very nice in the air fryer - not sure what I was thinking there 🤣, but with a poached egg, it was edible. I’m so pleased that I managed 8 today.

What did your spinach turn out like?
I made kale chips a few years ago with different results.

I made another 4 so 11 in total.

The spinach was a bit crispy, but I don’t know what I was expecting really in the Air Crisper mode 😂!

  1. Stewed Plum and Apple
  2. Baked beans
  3. Spinach (gently wilted this time)
  4. Kiwi
  5. Roast patty pan squash
  6. Raspberry and coconut pot
6.5 Peas

So, not 100% sure if desiccated coconut truly counts, but it is a fruit. The portion was 70g warmed frozen raspberries with 10g desiccated coconut. I know it’s only the second day, but the prep of a little dessert is definitely help curb the evening snacking of less healthy foods.

I am definitely finding myself less inclined to snack on food in the evenings. I think I'm pretty full from each meal. Enjoying a filling but healthyish breakfast lunch and dinner filled with fruit and veg is definitely making me eat less crap.
Today was...
B. Porridge with leftover cinnamon plums from yesterday.
L. Bowl of veg soup (pot o kale recipe upthread) with a tomato, cucumber and avocado sandwich (and vegan quorn ham)
Soya greek yoghurt with prunes and almond flakes

D. Rice noodles and stir fry with steamed pak choi and beansprouts.
Halo plant based ice cream.

So 10 easily today.

  1. Plums
  2. Veg soup x2 portions onion/leek/carrot
  3. turnip/kale
  4. Tomatoes
  5. Cucumber
  6. Avocado
  7. Prunes
  8. Pack choi/beansprouts
  9. Stir Fry 2 portions - spring onion/brocolli/baby corn

Handful of prunes twice today.
Lettuce and tomato in lunch sandwich
Nutri Ninja apple carrot celery blueberries
Pomegranate seeds
Sprouts for dinner!
That comes to ten if you count the prunes twice however it was only half an apple and half a celery in the Nutri Ninja.
So call it 9.

That's the problem with the smaller size Nutri Ninja beaker thing. A bit small.

Pomegranate seeds are apparently VERY good for us.

Good evening, I fell off the veg wagon again, but hoping to be more whole food based again for the future.
Thank you for the soup advice upthread! I often find it hard to know how to prepare quite basic things so I do appreciate it.

Today I had
apple and blueberries for breakfast, with alpro yogurt and seeds (1)
edamame, butterbeans, grated carrot, tomatoes, sugar snaps, beetroot, pea dip, and pineapple, all in a salad (5 portions by weight)
snacks: an apple and 3 satsumas (2.5)
dinner was roasted vegetable ravioli with sun dried tomato sauce. Steamed veg on the side: broccoli, carrots, cauli, sprouts, corn. (3 portions)
Over 10, partly as i was hungry and tried to eat a lot of fruit in lieu of other snacks, partly as lunch was pretty much all veg.

Narwhal I really like the sound of your salad. Do you make the pea dip or buy it? I have been eating less fruit and veg, for example, yesterday:

  1. Apple
  2. Peppers
  3. Salad/avocado
Way too much rushing around and not enough organisation. Should calm down tomorrow though.

Wilderness it was the Leon pea dip, which is delicious, but pricey. When I can be bothered, I make my own pea pesto which is great as a dip or sauce. I'm adding a screenshot of the recipe, it has cut a bit off which is the 12 sundried tomatoes and 1 oz of sunflower and pumpkin seeds. You just blitz it all in a blender or processor, it's quite a sharp taste but I love the freshness of it.

Breakfast: apple, blueberries with yogurt and seeds (1)
Lunch: ratatouille with chickpeas, nutritional yeast and a bit of leftover rice (4 portions of veg by weight)
Snacks: 2 satsumas (1)
Dinner: tarka daal with broccoli, carrots, red cabbage and corn (4)
Just about made it to 10, I think. It seemed a heck of a lot of f and v!
I can't remember if we said popcorn counted or not but there was popcorn, too.

  1. Stewed plums with mixed spice (very autumnal)
  2. Grapefruit juice
  3. Broccoli soup/ satsuma
  4. Carrots
  5. Savoy cabbage
  6. Homemade apple crumble

I think we should count popcorn - it’s just corn kernels at the end of the day.

Trying to focus again, yesterday's tally :
1 satsuma, fig
2 blueberries, plum
3 red pepper
4 Tomatoes
5 lettuce, aubergine
6 cabbage (I had cabbage carbonara sounds odd but was lovely!)

I have kale I have to use up. Not feeling the love there. I will cook a lentil dinner tonight.
