Ok, not really an AIBU, but I love these threads and they always get loads of traffic in AIBU!

I am in need of much inspiration and these threads are great for it.

Well technically DH is cooking it as I'm unwell.

We are having cheese stuffed chicken breasts wrapped in bacon, green beans and tenderstem broccoli, potato wedges for him and DC as I'm on low carb diet.

Am really looking forward to it!

We had roast chicken dinner yesterday so this evening with the small bit of chicken that's left we're having chicken & chorizo pasta. I wanted to make coronation chicken but we've no mango chutney in and I really don't want to go to the shop again

We got stuck in a rut so trying new recipes from the Good Food magazine this week. Tonight is vegan chilli with baked potatoes. Made the chilli yesterday and tastes really nice. Tomorrow is a lemon & herb chicken & butter bean traybake with potato wedges.

Wednesday is chole with cumin rice & raita. Thursday is one pot spaghetti & meatballs.

Friday is paprika chicken & cannellini beans. Best part is they all make enough leftovers for lunch the next day

I've taken prawns and chicken out of the freezer - dinner depends on what has defrosted by the time I come to cook. If it's just the prawns, then either prawn kedgeree or a prawn and mushroom risotto. If both the chicken and the prawns, then probably paella. There's an outside chance of chicken Madras tonight and a prawn something tomorrow!

Sorry meant to say also, many years ago on hols I Greece DH and I had baked Feta for s starter one evening. It was lovely.

Reading how many are having roast chicken however I now have a craving for that. Love roast chicken. A few weekends ago I did it Eat Well for Less style - rub jarred curry paste all over bird before roasting then plonk chinks of veg (white and sweet potato, carrots and cauliflower) underneath in the tray like a trivet. I find if you take the veg out for the last 20 minutes or so and pop on a clean tray they crisp up a bit otherwise because they've been I juices they're soft. Not a problem if not, still tasty and saves washing a pan. Then after sneakily eating all that lovely fragrant skin serve with naans, poppadoms and dips. Embarrassingly easy but sooooo good.

About to upset the carb police.

Yesterday's left over roast chicken, sun dried tomato pesto, and cheese toastie with a few fries but I probably won't eat many because the toastie is filling, I'll be making it in my grill because you can fit more filling in than in the toastie maker. Blush
