what's in the middle of a Victoria Sponge cake?

DS wants one for his birthday. I am using a new recipe that just puts raspberry jam in the centre. But doesn't it normally have bitter cream too? Or whipped cream? Am I imagining this?

I just put blackcurrant jam in mine, less over-sweet than raspberry or strawberry. Sprinkling of caster sugar on top. This wouldn't be a birthday cake, though.

My DM used to make a chocolate Vic. sponge with blackcurrant jam. The flavours go very well together.

I suspect most of the organisers being stuck in 1952, the prizes are usually of the order of 40 pence, so I suspect that it is all about the prestige of winning a prize for the best courgettes in the village or whatever.

It definitely is, @BarbaraofSeville. You should have seen my husband's indignation when his muffins were disqualified for their avant garde presentation. Puts the petty into competitive. I love our village show. Right back in the 1950s and that's quite modern enough thank you very much.
