what's in the middle of a Victoria Sponge cake?

DS wants one for his birthday. I am using a new recipe that just puts raspberry jam in the centre. But doesn't it normally have bitter cream too? Or whipped cream? Am I imagining this?

Whipped cream, jam and fresh raspberries here between a lovely light sponge. Nothing nicer on a warm summers day.

I make my own lemon curd as don't like it too sweet, problem is I now have to make several jars at a time for various family members and usually end up with none for me. Same goes for my home made raspberry jam. I am too much of a soft touch and fall for the pleading every time.

To enter a Women's Institute competition for the best Victoria sponge it has to be Raspberry jam and nothing else in the middle! Apparently thats the traditional recipe but I always put butter cream in too Grin

@BertrandRussell - I didn't know this. There is so much about classic cookery I am ignorant of. I want to make it in the microwave instead of stirring it over a bain marie for hours. Do you have a reliable recipe?

Also passion fruit curd? I have to try making that.

I know you didn't ask me for my microwave Lemon Curd recipe but here it is growlingbear:

Sorry it is in imperial measurementsBlush but it's an oldish recipe from early microwave days!

8 oz Granulated Sugar
4 oz Unsalted Butter
Juice and rind of 3 lemons
4 Egg Yolks

Put sugar, lemon rind and lemon juice in bowl. Heat on full power for 2 minutes.

Add butter to bowl. Heat on full power for 2 minutes. Stir well and leave to cool for 2 minutes.

Strain in egg yolks, mix and beat with whisk or mixer.

Cook on full power for 3-4 minutes, boiling rapidly.

Beat until mixture thickens.

Fill hot, dry jam jars and seal.

It's never failed me. I usually double the quantities and get 3 - 4 jars, I also reduce the sugar a bit as I don't like it too sweet but that is personal taste and a result of adapting it over time to my own/family preference.

I have a similar microwave recipe for raspberry jam if you want.

A fat-free sponge needs whipped cream in some guise.

A rich butter sponge--just jam, proper raspberry jam.

I did not know you could make lemon curd in the microwave! It sounds all wrong given all the bain marie malarkey. Every day's a school day.

You've just got to make sure the butter, sugar, lemon juice mixture is cool before adding the egg yolks NaturalBornWoman but that's it. It really is easy, quick and tastes divine.

My mum used to just spread passion fruit pulp onto he cake before the cream or buttercream. That was very very good too.

I usually make one with whipped cream in the middle if I’ve got dps family over as they are all into slightly healthier eating than my family Grin
A lady at work made a Victoria sponge and did it with buttercream, it was like a taste of luxury! Delicious and without doubt my favourite way to eat it.

My mil makes the best chocolate butter cream in the universe. I couldn’t reproduce it until I shone bright lights in her eyes and and discovered she uses salted butter. She just said butter in the recipe so I had used unsalted. Since then I use salted for everything.
