I know you didn't ask me for my microwave Lemon Curd recipe but here it is growlingbear:
Sorry it is in imperial measurements
but it's an oldish recipe from early microwave days!
8 oz Granulated Sugar
4 oz Unsalted Butter
Juice and rind of 3 lemons
4 Egg Yolks
Put sugar, lemon rind and lemon juice in bowl. Heat on full power for 2 minutes.
Add butter to bowl. Heat on full power for 2 minutes. Stir well and leave to cool for 2 minutes.
Strain in egg yolks, mix and beat with whisk or mixer.
Cook on full power for 3-4 minutes, boiling rapidly.
Beat until mixture thickens.
Fill hot, dry jam jars and seal.
It's never failed me. I usually double the quantities and get 3 - 4 jars, I also reduce the sugar a bit as I don't like it too sweet but that is personal taste and a result of adapting it over time to my own/family preference.
