I'm cooking a chicken roast dinner, fancied it all day 😋

What you having?

We had roast chicken with rosemary and garlic potatoes, maple roast parsnips, marrowfat peas, steamed carrots and gravy last night - was delicious!

Dh and I had left over roast chicken sandwiches for lunch today

Tonight will either be meatballs oven cooked in tomato sauce with parmesan, served with salad and garlic bread (the meatballs are a new range from Aldi - never had them before - they come in a silver foil tray, with the sauce and cheeses separate and they look very good so hopefully will be nice.

OR lasagne with salad and garlic bread

OR chicken faijitas with homemade wedges and salad.

Have all of the ingredients for these in the fridge so will be one or the other. Will decide later when I get home

Smoked haddock, seafood and broccoli risotto which no doubt fussy DS1 will mither about Hmm

Gnocchi in a roasted red pepper sauce, topped with breadcrumbs and mozzarella then baked in the oven. New recipe so not tried it before.

grazie that sounds very nice, do you use ready made gnocci and sauce or do you make them? I would like to try this

IvanaPee · 30/04/2019 15:14

Grazie do you have a recipe?!

graziemille567 · 30/04/2019 15:26

Yeah, it's from the BBC Good Food website, here's the link:

Thanks!

Shepherd's Pie & veg tonight with mum's special mash which according to DS makes all the difference

Noting down lots of ideas too.

Mrsjayy · 30/04/2019 15:49

I am having shepherds pie too what do i do to make my mash special ?

nannyplummyarse · 30/04/2019 15:54

Well I've failed today. Forgot to get meat out the freezer this morning 🙈

So it's a freezer dinner tonight. Although I fancy cheese and pesto on toast. Dh and the kids won't be happy with that so it's a lucky dip in the freezer for them 😬

Buttermilk marinated roast chicken, Parisian style gnocchi with roast tomatoes, corn, and courgette

Mrsjayy · 30/04/2019 16:01

Nothing wrong with a bit of freezer food we are having it tomorrow

happyhillock · 30/04/2019 16:03

Potatoes, mince, brocolli and peas.

confusedofengland · 30/04/2019 16:05

DC are having scrambled egg, toast, baked beans & mushrooms.

DH & I are having either egg & chips or steak & kidney Pukka pie (from the freezer) & chips/wedges.

Tomorrow will be cottage pie all round (the DC eat earlier as DH gets home at their bedtime, so I make theirs in individual ramekins & ours in a Pyrex dish)

happypotamus · 30/04/2019 17:31

A not-homemade chicken pie and peas for me.
Thought I was only cooking for myself before my night shift as DC would be fed by after-school club/ nursery, but DH bought them home and said he had picked DC1 up too early before after-school club had done the food, so she is having fish fingers and peas because there wasn't much else I could make in no time without many ingredients (we had pasta yesterday or she would have had that)

Redact · 30/04/2019 18:41

Chinese style salmon fillets and (lazy micro) rice with peas, sweet corn and some coriander mixed through. So quick, easy and delicious

WheelyCote · 30/04/2019 18:47

A prawn, creme fraiche, chilli, rocket thing....very yummy. Out of hellofresh box

Thepearofwisdom · 30/04/2019 18:51

Got some fancy bread, gonna make a feta salad to go with, have just put a rhubarb and strawberry crumble in the oven with rhubarb from the garden, feeling very nigella this eve, all I need now is a big glass of wine, but alas, I need to empty kitchen cupboards as kitchen fitter is coming tomorrow instead of Saturday argh!

Mitzicoco · 30/04/2019 18:53

Mashed avocado on homemade gluten free bread, quinoa salad, quails eggs and selection of homemade dips with carrot and cucumber batons. Just kidding! Beans on toast.

APurpleSquirrel · 30/04/2019 18:54

Pan-fried lamb leg steaks, with spring green & lentils.

JoinTheDots · 30/04/2019 18:55

(I just know I am going to get loads of recipe requests for this one...)

Oven french fries
Chicken goujons
Baked beans

Quite frankly it was bloody lovely. I have not had a frozen, brown meal in MONTHS.

Devaki · 30/04/2019 18:56

DP and the DC having chicken and cheese quesadillas with salad.

Not sure what I'll have yet. Something slimming world friendly

BooseysMom · 30/04/2019 19:08

@JoinTheDots..we've just had the most evil of carb heavy brown meals too! Scampi and oven chips (triple cooked battered ones) But we did have a salad with it. So that makes it ok! Plus i insist DS has an apple "to soak up all the fat" as my dear late Mother used to be fond of saying. Grin

freshasthebrightbluesky · 30/04/2019 19:12

Dc had beans and sausages, dh will have a ready meal (some type of curry I think) and I'm having leftover pasta bolognese from yesterday.

Squiff70 · 30/04/2019 19:15

Freezer roulette. Diced turkey with mushrooms, potato waffles and broccoli. Hangs head in shame
