@JulieSmittyCat at least the other two where better to work at but it sounds like that other place should of been shut for longer than 24hrs.

@Danni91 no deffo not I'm always correcting orders fo things I like and most places should cook things fresh for orders so if anything your saving them ingredients. You can 100% get a chow mien without bean sprouts just ask when you order and the should be able to do this for you I do it all the time.

@LyingWitchInTheWardrobe that's a good order your way of eating pancake rolls isn't that odd I sometimes scrape all the filling out then refill with fried rice and curry sauce so each to there own 😂 I don't like crisp beef either it's the texture however the crispy chicken is one of my favourites but has to have extra chilli in.

I must call in to your takeaway, mniser, I have a client in Durham and I'm sure they're due a visit. Spennymoor way but Durham is Durham to me and, your takeaway sounds fabulous, I think you should name it so I don't go to a rogue one by mistake! Grin

I keep coming back to this thread, yours sounds like a particularly nice establishment. I can't imagine that everything at my local takeaways are made fresh to order although I like to think so!

Can I ask, what's in a portion of plain chow mein/soft noodles? Apart from bean sprouts? They're so tasty and kind of brown in colour? And sometimes have little bits in it. Are those bits cooked down meat to give it flavour?

@Sagradafamiliar we just cook ours with onion bean sprouts and soy sauce I think the darker bits will just be parts where the soy sauce is less mixed through. We don't add salt to ours as you get that from the soy sauce.

I wouldn't be surprised, I know SO much more about Chinese food now and eager to try sometime soon Grin.

@CatAndHisKit we are more dirham than Newcastle however my dad lives in Newcastle and when I was going through my grungy teenage years I did love going to China town I got all my piercings done there but have gradually took them all out due to motherhood.

@JesusInTheCabbageVan it's was a bit of a panic but they did really well we only have two chefs so i got roped into frying and wrapping as well and we re checked everything maybe three times to be on the safe side they also got six bags of prawn crackers and had orders 60 spring rolls

Didn't know there was a China town in Durham, it's so small, I only visited once to be fair. There was a great sunset to be watched from the bridge on that day, a magical view.

@CatAndHisKit sorry I meant the China town in Newcastle I probably didn't write that well and yes motherhood does take up more of your time than you realise but I wouldn't change it for the world I have 16 piercings at one point but they gradually went down then had to have an emergency C sec so took the last of them out and after having sepsis was advised to leave them out until antibiotics did there magic work and by the end of the week I just wasn't bothered about them. Little hands could cause a lot of pain so not really worth it 😂

definitely not worth it, and tbh doesn't look good once you get a bit older.

No, I understood about you doing piercings in Newcastle when young, but when you wrote in much earlier post that your takeaway is not in a Chinese area, but there is China town in you city, I thought your takeaway was Newcastle based - I was talking about where you were now when commenting on Durham.

@CatAndHisKit no your right they don't look great as people age but each to there own it's just not for me anymore haha. Had I not said that there was one in a near town to me? I can't quite remember I'll have a look.

Ah ok, maybe you said that, sorry! Do you know what's a good Chinese in Newcastle's China Town by the way? I once got completely lost there trying to find the centre of town, haha. I stay in N sometimes.
