B. Pear,fig,apple o/n soaked with ground linseeds and applejuice/water smoothie
L. H/M Leek bake, endive,shallot and carrot salad, steamed broccolli with h/m/ horseradish sauce . Choc buttons
S H/M. Minestrone and spelt toast

B Overnight oats with pumpkin and sunflower seeds added in the morning
L Seed bread toast with houmous and sliced tomatoes
D Pasta with tomato sauce, lots of veggies and lots of green lentils, topped with nutritional yeast.
Sn Fruit and some crackers with peanut butter. Also a few walnuts. Trying to keep protein levels up.

B: porridge with seeds and strawberries
L: high protein noodles with a miso and kale sauce (Meera Sodha recipe)
D: kidney bean and quinoa chilli with rice and guacamole
S: satsumas

This was a really tasty and healthy day (although not particularly low calorie)

B: hangover Richmond sausage sandwich on sourdough with brown sauce
L: ramen with wholewheat noodles, cabbage, mushrooms edamame and peanuts (this was one of those thrown together lunches using what was on the turn in the fridge and it turned out to be really nice).
D: Thai yellow tofu curry with peppers, kale, green beans and brown rice

B - Porridge with sliced banana, Biscoff spread and mixes nuts/dried fruit
L - Bagel with ‘ham’, lettuce, cucumber, tomatoes, radishes. Veggie stick crisps
D - ‘Chicken’, leek and mushroom pie with cabbage, roast potatoes, carrot and Swede mash.
S - apple, digestive biscuits, go ahead soft bake bar.

Technically eating for two, as I’m breast-feeding my plant based 4 month old as well 😛

FWIW tonight we are having dhal and rice.

Can’t get enough dhal. I always try to batch cook it but then I eat loads of seconds so there’s hardly any leftovers.

Trying to diet today as have overindulged...but
Scrambled tofu is an amazing breakfast
Mashed up beans and veg for sandwich fillings
Fake meat is also really good IMO with lots of veg

B: toasted seedy bagel with flora and marmalade, coffee
L: homemade beans, potato latkes, this isn't bacon, grilled tomatoes and mushrooms, wholemeal toast, orange juice
D: miso aubergine with cashews, noodles and Itsu veg gyoza, glass of wine
S: apple, Tony's chocolonely chocolate almond seasalt chocolate, lentil crisps

L: wholegrain wrap with houmous, hemp seeds, grated carrot, rocket and cucumber. Packet of walkers baked ready salted crisps
D: sweet and sour 'chicken' (with peppers and onions) made in the air fryer with rice.

Love this thread. I assume it’s from constantly being asked ‘what DO you eat?’

yesterday:
porridge with frozen raspberries and cacao nibs;
left over pasta with pesto and roast aubergine, mushrooms, peppers and leeks.
dinner was more as I’d made loads (my modus operandi so I don’t cook every night), Salad.
melon, blueberries, grapes and yogurt.

I'm afraid I usually have the same for breakfast and pudding, so I’ll probably only post what I had for dinner now 😅

D: Plant pioneers meatball stew, squeaky bean omelette, roasted aubergine and padron peppers.

S: a pear, a couple of squares of dark chocolate

@goteam thank you for the suggestion of miso aubergine, tried it the other night and oh my it’s delicious!

Last two nights I made parsnip potato and mushroom gratin. Did my usual trick of making too much so had to have it twice; always better the second night!

any suggestions for tonight, please? Fancy something dirty but we’ve had sausages and burgers already this week! 😆

Richmond sausage, Dh isn’t vegan and he loves them, fried up with onions.

We also had homemade chickpea curry.

Vegan wine 😂

I’ve had sausages that were so ‘good’ I thought they must be meat; was too much for me actually! My dh says the Richmond ones are good, I can’t have them because I’m gf.

We had pizza loaded with roast veg, oven chips and sweetcorn, with wine 👍

Tonight we’re having pasta with lots of mushrooms, more roast veg and Zest sauce. With more wine 😍👍

Porridge is same everyday, made with water, ground seeds, apples and spices.

Lunch today was wicked kitchen recipe on chickpea salad avo toms sandwich without the vegan cheese and some air fryer chips/carrots.

Dinner was a mixture of 2 curries, vegan aloo Gobi and Indian stirfry

Tea break with fruit

Toddler had her dinner with wholewheat pasta as safe food

@bakewellbride welcome and congratulations for coming over to the dark side! Apologies to @ppeatfruit, we’re not taking over just holding the fort for you.

I'm afraid I had more of the pasta again, but with pickled beetroot slaw that had been reduced followed by a lovely watermelon fruit salad with yogurt, and fartoomany dry roasted peanuts while watching a film. Must stop buying them!
