B. Pear,fig,apple o/n soaked with ground linseeds and applejuice/water smoothie
L. H/M Leek bake, endive,shallot and carrot salad, steamed broccolli with h/m/ horseradish sauce . Choc buttons
S H/M. Minestrone and spelt toast

@Errolwasahero thanks. I was pescatarian age 10-26 then vegetarian for a good few years. I recently discovered how cruel the dairy and egg industry are and lots of other reasons to make the change too e.g health / environment and for me that was it!
So happy I made the change, I love it and it feels so clean and healthy. I don't feel remotely restricted in fact if anything I feel less restricted because I now snack 1-2 times a day and eat more carbs whereas when I was just vegetarian I had to watch my figure much more carefully.

Today -

Hot lemon water (been doing this for years)
Protein shake including spinach and banana
Granola and banana

Beans on toast with yellow pepper and quorn pieces

Later I will snack on nuts and fruit.

Tea will be something thrown together with tofu and lots of veg / avocado

All washed down with lots of coffee as my youngest is not sleeping!!

@bakewellbride it’s amazing how bad dairy is.

I treated us to quorn peppered steaks tonight, with potatoes and salad. And heaps of fired onions and homemade mayo. Nomnomnom.

Making a delicious winter vegetable and pumpkin curry for tonight, from the book by Barbara Cousins, vegetarian cooking without, because her stuff is all dairy free anyway all the recipes are actually vegan! (She doesn’t use eggs either).

This will definitely feed us all weekend! 😍

My dh - who usually eats meat with almost every meal - cooked last night and did vegan for everyone. I am so proud of him, it really surprised and impressed me! A delicious stir fry which he'd usually have with chicken or prawns but this time vegan spring rolls instead.

Really pleased with my vegan ideas yesterday

Breakfast- mostly toast, couldn't manage much of porridge
Lunch- homemade tofu summer rolls and chips

Dinner- craving pizza earlier in the week so I made some wholewheat pizza dough in the day and topped with sauce, roast squash peppera..no cheese.

Haven't found a vegan cheese/mozzerella worth the money or taste tho. Also I can't be spending that much on cheese. Any one got any recs for vegan cheese

@Singleorigincoffee I am a total newbie so don't feel in a place to make any recommendations 😂but Aldi grated 'coconut oil cheese alternative' is really nice and my kids like it too.

I like strong cheese on pizza anyway, so the smoked applewood is great for me. I do have a great cheese recipe will try to put it on.

We use applewood on pizza but vegan cathedral city is good for a non melty cheese.

Had a look around..heard mozzarisella on Amazon is supposed to be amazing but .... the price 😂

I will just do cheeseless pizza for now

Breakfast: Wholemeal bagel with marmite
Lunch: big salad with leaves, tomato, cucumber, celery, gherkins, sweetcorn, chickpeas, mixed seeds and sweet chilli sauce.
Dinner: I'm planning tofu stir fry
Snacks: nectarine and dried apricots

I’m aiming for low(er) carb so also had a lovely big leafy green salad tonight, with roast veg and mushrooms and some of those peppered steaks again. I don’t have them often, honest!

Tempeh, hummus, red pepper and gherkin sandwich

Baked vegan banana bread with my eldest so had a bit of that!

A bit of toast to keep me going as ate later with dh once kids asleep. I don't usually do that but I'd just got back from a chaotic softplay party and needed to keep going somehow!

Chickpea thai green curry with green beans.

For drinks I always have hot water and lemon first thing and drink water, tea and coffee throughout the day. I have oat milk.

Hey gang - I was on the thread a long time ago and dropped of but would love to rejoin if that’s ok, mainly for inspiration really!

L: spaghetti with roast veg and marinara sauce
D: taco using fable mushrooms which I’ve just discovered and are amazing! Trying to use up a ton of Mexican salsas and dips given to us by a friend. A persimmon
S: a whole bag of cashew 😧 one of those falafel and hummus snacks pots, some macadamia nuts

D: I'll be cooking a roast, so I'll have the roast potatoes, parsnip, carrot, plus cabbage and brocoli. Not sure what to have for the protein though.... I'd usually have a quorn roast. Any suggestions?

Today I have eaten too much food whereas I was quite good yesterday.

B- Kelloggs blueberry wheats with oat milk (DD had weetabix with peanut butter, grapes and blueberries)
S- Aldi vegan croissant and Aldi vegan caramel shortcake
L- Heinz vegan beans and sausages, vegan cheese, toast and tomatoes
S- a lidl lebkuchen and half a vegan twilight bar.

I’m uncertain about dinner, maybe vegan fish fingers, sweet potato chips and peas as I want to make something that DD will eat too.

L: roast dinner at the pub - mushroom pithivier was the vegan option and it was lush
D: toast with hummus, salsa verde, jalapeños and lettuce. Slice of applewood cheese
S: glass of wine and some chocolate

You all have such interesting food! Gives me inspiration. Yesterday was a couple of oatcakes and sheese for lunch as I was running out the door, then Tesco’s sausages with half a baked potato, roasted mushroom, fried onions and green salad with added roasted butter beans.

the salad will do for today’s lunch… not sure what’s for dinner yet.

@NaomiS1 I fry onion, chickpeas and whatever veg I want in a frying pan for 5 mins then add shop bought Thai green curry paste and mix for a few more mins. Then add 1/2 tin coconut milk and simmer for a further 10-15 mins. Meanwhile I sort out the rice and naan bread. Serve with mango chutney, it's so good and easy.

D: wholemeal pasta with a homemade 'rainbow veg' sauce (red onion, garlic, tomatoes, celery, carrot, peppers), spicy beans and brocoli on the side

Ugh I snack too much in the evenings!!

L: lentil soup and toast then an apple
D: burrito with fable mushrooms in chipotle, red cabbage, applewood cheddar, aioli, various salsas, Jalepeno, coriander, brown rice
S: artichoke hearts, olive oil and cinammon biscuits, wine, small square of chocolate, more applewood cheese
