B. Pear,fig,apple o/n soaked with ground linseeds and applejuice/water smoothie
L. H/M Leek bake, endive,shallot and carrot salad, steamed broccolli with h/m/ horseradish sauce . Choc buttons
S H/M. Minestrone and spelt toast

Hope you're all well and coping with the food shortages. !

Ugh I snack too much in the evenings!!

L: lentil soup and toast then an apple
D: burrito with fable mushrooms in chipotle, red cabbage, applewood cheddar, aioli, various salsas, Jalepeno, coriander, brown rice
S: artichoke hearts, olive oil and cinammon biscuits, wine, small square of chocolate, more applewood cheese

Me too! Evening snacks are my downfall!

B: oatibix flakes with oat milk and raisins
S: Nakd bar
L: protein bagel thin with quorn and tomato, lentil crisps, clementine
S: a jammie dodger, some peaches
D: funghi pizza
S: Swedish glacé ice cream, more lentil crisps and 4 buttered (with naturli) crackers 🙈

I’m not back at work yet so managing to keep the snacks down. And NOT buying any!!!

had a lovely curry with veg and lentils tonight; also two sausages with salad for lunch and yoghurt and blueberries with a linseed mix for breakfast. Oh and a berocca. 😅

B: Porridge with mixed seeds, strawberries and sliced banana
L: left over spicy bean pasta
D: vegan sausages, mashed potatoes with green beans, brocoli and sweetcorn (I'm thinking I should have had Kale or similar to make it healthier!)
S: at various points throughout the day: Turkish delights left over from Christmas, apple, satsuma, seaweed thins

I had a really carby day today:
B: toast with marmite
L: homemade lentil, sweet potato and spinach dahl (I batch cook and freeze loads in advance) with naan
D: one of those Linda McCartney burgers with home-made skin-on chips, beans, sweetcorn and peas
S: mixed dried fruit with some nuts and seeds

We had this risotto tonight, was delicious. Really easy to make vegan - the butter, cheese and stock cubes were all swapped with alternatives. Had with a side serving of sweet potato fries and cherry tomatoes

That looks an amazing way of cooking a risotto! I wonder if it would work with different rice, or even quinoa? I like meals where you combine all the ingredients then bung it in the oven!

So far

oatmeal with seeds, banana, raisins for breakfast with hot lemon water

then a lime and lemongrass tempeh wrap and a few spinach potstickers.
