Very time sensitive stuff like tempura never does very well at banquets. They go soggy when mass produced, sit around waiting to be sent out.

I miss the days when chefs who'd got to Finals' Week or even the banquet would come back for a second go. I felt the standard used to be higher back then. We seem to get fewer Spencer-standard chefs these days. Maybe just two or three per series.
