If I was going on Masterchef I would practise

filleting flat and other fish
boning out a chicken
prepaing rack of lamb and cooking it.
making pasta
making sponge cakes/ custard/crème pat
making a couple of pastries, choux, short and flaky

because experience tells me that they come up year after year.

All of those.

Plus making a basic roux and some variations on it
A fruit tartlet with an ice cream recipe that you can adapt
Mayonnaise, hollandaise, bearnaise
A tried and tested chocolate fondant
Fondant potatoes
