As far as I can recall, cardigans (it was a fair few years ago) the sweetbreads I had were done with chestnuts and the texture was similar - quite soft and yielding. It was OK but I wouldn't rush to have it again.

I do like offal generally though. Love liver, kidney, etc, and we often used to have lamb hearts when I was a kid - delicious!
