Thanks, Halsall. I'm not a big fan of offal (hate liver, kidney & tripe), but I'm interested to try sweetbreads.

One of my friends makes a mean venison heart stew (so he tells me). I have yet to pluck up the courage to try it!

I am learning not to hate venison. DH loves it so I cook it for him every now and then. Olivia's menu seems very creative.

One thing I've noticed is that none of the chefs EVER lines a tin neatly when they make cakes - they just shove in a bit of greaseproof any old how. It's funny to see, as a home-baker myself who always lines tins with huge care. Different mindset completely I suppose.
