BBC2, 8.30pm. Monica is back. Michel is back. Sadly, Greg is also back, but we can't have everything. This is my favourite Masterchef variant, so I am a happy bunny.

I thought that too, Grace. Who doesn't leave the shaped loaves to do another rise?

I have never seen it done the Monica-way before teeardis and I'm from a long line of bakers.

I have seen bread made with only one rising: I think it might have been a 'Doris Grant loaf' or some such. That's fine if you are in a hurry and need to knock up a batch of loaves quickly, but for Masterchef and fine dining? No, IMO.

I agree, Jax, I thought Ryan was far too up himself from the start. That's taken him down a peg or two!

I can't wait for tonight! The critics is my favourite one of the week! Though I don't like Mr Thumb much - you know, the grossly fat one.

I have made bread with only one rising quite often, but I would expect two risings for Masterchef!
