Morning all!
I've been away most of this week, working in a place where there was nothing other than carbs to eat. I have, therefore, been a totally carby twat! I've also been sleeping really badly and it's been a very stressful week for one reason or another, so not exactly a great combination for encouraging weight loss. Thankfully it hasn't affected my IBS, and I'm glad to be home now, and eating 'my' food.
Tonight I'm looking forward to making the IPD moussaka. Next week at work is going to be a pretty full-on week, and so I'm going to make sure I've got stuff to take to work to eat, as although I have a wide range of shops/food places near me, the choices available to me as a low carber are pretty limited, and I'm getting bored of only having cold foods - meat/cheese and salad. It really pisses me off that every ready meal or soup is just so high in carbs. Does everything have to come with pasta/rice/noodles or mash?!
We do have a microwave at work, so I can take stuff from home and have something hot, which will be much better.
And speaking of microwaveable low carb foods, here's an interesting-sounding breakfast recipe
Hope you all have a lovely weekend. The sun is shining and the sky is a lovely deep blue here. I may even go for a run later. Or I may not ...
