So we come to our final week.

No problem - it's dead easy.

I use the extra thick grass fed fillet steaks from Lidl (it's a once a month treat when I have the 10% off voucher)

Salt both sides of the steaks with a good sprinkling of Maldon sea salt a few hours in advance and put somewhere the cats can't get them

Heat a heavy bottomed sauce pan, very hot, with a little bit of coconut oil and then a lot of butter, so that it froths. Throw in the aromatics - a generous number of thyme sprigs or rosemary. (Warning: it might spatter when you do this, especially if the thyme is fresh)

Put in the steaks and either turn regularly or baste regularly. Cook for 2-3 minutes. Take out and leave in some foil for 7-8 minutes (all steaks take 10 minutes between cooking and resting).

Heat plates before serving. Put any juices that have come out while resting over the steaks.

I've done it with three steaks in a larger pan, but I think to do four, I'd do it in 2 separate pans.

I have totally found this with pretty much all carbs. But, I did have some marmite on toast at the weekend and it was bloody amazing!

Potatoes, pasta, rice? Meh am not really bothered.

I DO miss fruit and pulses though.

Ditto on not being bothered by most carbs but missing fruit and pulses.
