Jan '23 Low Carb Bootcamp - the final weigh-in

BIWI · 06/03/2023 07:52

Morning all.

Here's the Spreadsheet of Fabulousness for its final outing

I hope that this has been a good Bootcamp for you all - it's been fairly quiet and peaceful this time around! Never sure if that's a good thing or not, but at least we haven't had any public flouncing!

I know that not everyone joined us in week one, and @AlmaHart has only just started (!) but don't worry - we'll keep this thread going for general chat and ongoing support.

There are also a couple of extra columns on the spreadsheet too.

Thank you for everyone who has posted and supported - and special thanks to @Finallyhere for womanning the spreadsheet

Today is a new day and I'm going to be LC if it kills me - after yesterday I need to get back on the wagon.

Starting the day with black coffee. I have boiled eggs in the fridge, steaks waiting to be cooked for dinner, and a veg delivery that arrived yesterday. However I also have DC who want to bake something sugary (and were promised they could), so I'll need to summon all my resolve!

StuntNun · 12/03/2023 09:40

I made two pavlovas for a party yesterday (never fear - not one morsel passed my lips!) and I now have twelve egg yolks going spare. Apart from making a gallon of hollandaise sauce 🤤 can anyone think of any other ways to use them up?

prettybird · 12/03/2023 10:15

Low carb carbonara (I know prefer sliced cabbage to courgette strips) with just the egg yolks. That can take up a fair few (and makes a lovely rich carbonara) depending on how many you're making for Wink

You can also freeze them: break the yolk and sprinkle a pinch of salt on them.

My low carb pavlova used 12 egg white (although I now make a half quantity which makes it slightly more manageable Wink) plus I made a standard pavlova for my friend's garden party a few years ago so I share your pain Grin

BIWI · 12/03/2023 11:51

I'd make a cheese sauce (cheese + cream) and add some egg yolks to that, for extra richness.

@StuntNun what about custard and/or ice cream? Coffee ice cream is lovely and doesn't need to be very sweet. Rhubarb also good.

I'm staying in control so far today, have had a tomato and three mashed eggs and butter for lunch. I ought to be full but find myself looking for something else. Will likely have a creamy coffee shortly, hopefully it will fill the chocolate sized hole in my willpower!

FinallyHere · 12/03/2023 17:43

any other ways to use them up?

In a non LCBC world, I'd be all about Theo Randall's lemon tartt*

adjusting the proportion of while eggs and egg yokes to use up what you have. You wouldn't miss a few egg whites in that mixture, perhaps a touch of liquid if it seems dry-ish.

LCBC? Nope, sorry.

Ok, maybe the hollandaise and some very rich scrambled eggs. Sigh.

FinallyHere · 12/03/2023 17:49

Goodness, soz., I let myself be completely distracted there. Sigh

My post was supposed to be about today's main meal, which was entirely LCBC compliant and delicious, as such things are wont to be.

Spring onions fried over a very low temp in a mix of goose fat & butter, veal escalopes cutted up and flash fried, everything drained and kept warm while first mushrooms and then spring cabbage fried in the juices.

Added a teaspoon mild French mustard and a glib of double creme, add everything back into the pan and warm through. Season salt, pepper and finely chopped flat leaf parsley.

Delicious. very satisfying but none of the sluggish feeling afterwards. Coffee was had.

Rollerbird · 12/03/2023 17:51

Yummy roast chicken roast cabbage and celeriac mash for tea.
Lunch fried cabbage omelette with Chinese 5 spice in the beaten egg.
Lots of water and coffee with double cream (is this OK @biwi, all the cabbage?)
The scales of doom will tell all tomorrow

BIWI · 12/03/2023 19:04

There's nothing wrong with cabbage @Rollerbird! It's just that it's important that you have more protein with it - which is looks like you have.

Good day on the LC wagon, a huge relief to be back in control.

L - eggs, butter, tomato
3pm - clotted cream coffee
D - steak, chimichurri, roast Mediterranean veg with feta and lots of olive oil.

pinknsparkly · 12/03/2023 21:03

Evening all! I finally made celeriac and leek mash which we had with pork bolognaise for dinner. I enjoyed the mash but my husband didn't so I'm not sure I'd make it again but it does mean I've got enough for most of the rest of week 😅 (I tend to batch cook every few days).

Almahart · 13/03/2023 07:18

Morning! 6 pounds down in the ten days since I started BC. Will be moving to BC light on Wednesday. Yesterday's food was yoghurt for breakfast, cheese omelette and salad for lunch and chilli with sour cream and cheese for dinner (kids had wraps and rice).

I've made coconut milk cauli soup from the veggie recipe thread for lunch today and dinner will be beef stir fry.

I have noticed a huge difference in my energy levels and friends have remarked on how much better I seem. Kicking myself for not remembering low carbing earlier in my long covid journey but very happy to be back on it.

Rollerbird · 13/03/2023 07:38

Fantastic @Almahart

SpottyBumPony · 13/03/2023 09:25

Does anyone take a probiotic or can recommend one?

OldandTired66 · 13/03/2023 10:11

Bookmarked the bouillabaisse recipe, @venusandmars, that looks amazing. Drawing a veil over this morning's weigh in and putting it down to a new battery in the weighing scales plus cleaning the accumulated grot of the little feet and not my sisters visit and eating out all week 😬. Quiet week ahead so no lapses this week and a lot more some exercise.

Rayna37 · 13/03/2023 10:53

Up slightly after a weekend away without many low carb options, and finally had some of the birthday chocolates I'd been saving since the start of bootcamp.

Disruption as new boiler being fitted today (and potentially into Weds!) but at least we'll be warmer once it's all over. Might go out for lunch and to work in peace this afternoon! Managed an omelette for breakfast though and have a cauliflower topped fish pie previously cooked and frozen lined up for an easy dinner.

Baystard · 13/03/2023 11:16

@Almahart well done, that's a great start to BC! I like the cauliflower soup idea too, you've inspired me to make some today.

SpottyBumPony · 13/03/2023 13:30

I'm feeling proud of myself, I went to a Baby Shower on Saturday. I stuck to my choice of two starters (the mains where pizza/pasta etc) and wasn't tempted by the sweets, chocs and crisps back at the house.

I was v hungry when I got home and almost put DH's pizza in to cook but was strong and did some mushrooms with blue cheese instead

mimosa1 · 13/03/2023 13:52

I've moved to maintenance (but planning to join the next BC if there is one) - @BIWI @FinallyHere do you think you'll be up for running another one later this year?

FinallyHere · 13/03/2023 15:30

@mimosa1

Didn't want your question to remain unanswered. It's entirely up to @BIWI, though I'm certainly keen to continue.

I'm always grateful for company on this thread between bootcamps, as I (and hopefully there will be others) who continue with this way of eating between the actual bootcamps.

Hope others stay around, too.

StuntNun · 13/03/2023 15:53

@SpottyBumPony is it for any specific issue? There are different prebiotics and probiotics depending on the need. If you just want to improve overall health then I'd look into adding fermented foods such as kimchi, raw pickles, kefir etc. into your diet.

Almahart · 13/03/2023 17:08

I'm sticking around for the foreseeable future and am very grateful for everyone's company.

@SpottyBumPony well done re resisting the pizza!

prettybird · 13/03/2023 18:58

If @BIWI wants a break, I'm happy to run a Boot Camp. I did the pre-Christmas one and it really helped me stay focused Wink

I'm not as good as BIWI and my Big Stick is not as big but I do my best to "channel" her Grin

Baystard · 13/03/2023 19:03

Checking in for accountability!

L- thai cauliflower soup
D- roasted med veg, feta, cheddar, pork sausages and turnip.

Now enjoying tea with milk.

Rollerbird · 13/03/2023 19:13

How many bootcamps are there normally a year? I joined this part way through and although I have done a lot worse than I wanted I definitely want to carry on.
