We have a week before we start (next Monday, 17 January), so it's a good time to start thinking and planning for what you're going to do.

@BIWI

That's interesting *@StuntNun* - why can't you use it with an exposed element? (I have no idea if mine is or isn't!)
I think the element overheats if it isn't surrounded by liquid. You'll be able to see by whether there's a flat bottom to your deep fat fryer or whether it has a metal element in - the same as how some kettles have a flat bottom and some have the element immersed in the water.

@StuntNun that is interesting, my fryer has a concealed element but the instructions still said it wasn't suitable for use with solid fat (which I ignored Grin ).

@YesIcan3 my veg was just steamed/boiled. I have always eaten it this way. I should have added some butter to up the fat maybe

I steamed some veg then tossed it in butter with a little salt and it was delicious. Today we steamed some cauliflower and broccoli then set it to one side and put some cream and grated cheese in a pan. Melted the cheese into the cream as it heated, then poured the lot over the veg, sprinkled a load more cheese on top and baked it in the oven for 20 mins. Got the idea from the Diet Doctor website. Again, so tasty. I batch cooked a beef stew and did dumplings for the kids. DH and I just had it with the veg. I have eight portions left over for another day, so it was well worth it.

I'm quite headachey today - assume this is the lack of sugar. Especially after the excess of the past few weeks! I'm drinking loads of water though and adding salt to food, so hopefully it will pass soon.

I think BIWI used to make cauliflower cheese the same way Fleecy. Have a look at the recipe threads

I shall have a nose at them. My shop comes every Monday so I plan to spend some time looking for inspiration and ideas over the weekend, so I can have some different meals next week and I won't get bored.

And it's not like we eat weird food or anything on a low carb diet!

Hahaha @BIWI nope not weird at all, I guess it's just a case of changing bad habits of quick meals just banging in the oven and it's done sort of speak. But something needs to change I have put so much weight on this past 2 years it's shocking and I'm getting quite down about it. My birthday is in March also so nice to have a little goal and drop a few pounds and hopefully change the way I eat!

Todays food was scrambled eggs for breakfast, a couple of roasted chicken thighs with skin on and a coffee with double cream. Tea was some lovely lamb koftas made by DH, with griddled halloumi, salad and mayo.
Still craving sweet stuff but I have ignored the chocolate in the house. I went into the office today and there was all manner of sweets, biscuits and chocolates that people had brought in to get rid of.
I resisted but it was tough. I know that it will get much easier if I stick with it.

You can use crumbed up pork crackling for added crunch, or crispy streaky bacon.

There's always celery or cucumber too?

You can make 'crisps' out of grated mature cheddar or Parmesan - just place heaps of grated cheese on a baking tray and bake till they melt and brown. As they cool they'll go crisp.

And if you look at the recipe threads, on the vegetarian one you'll find a few recipes for low carb crackers.

@Batshittery you are giving me some good ideas. Well done on not giving into temptation I totally forgot to add chicken thighs on so put them on for my lunches. @ThePrionOne I know that feeling!

Chicken thighs are a staple for me when low carbing YesIcan. I roasted them on Sunday and kept in the fridge. I can use them in salads or for lunch or just as a snack.

Hi everyone - I just found you all and would like to half join you next week please.
I am in maintenance mode only thanks to previous Bootcamp success but eager to get some new ideas and maybe lend a little extra support to those new to Bootcamp !

If it helps inspire anyone 2022 was the first new year I can remember in a long long time that i didn't need 'lose weight' as aNew Years resolution which was so liberating I have finally taken up daily yoga instead !
Rooting for you all - it works !!!

Don't need to be on the spreadsheet but will check in on Monday.
