We have a week before we start (next Monday, 17 January), so it's a good time to start thinking and planning for what you're going to do.

I've done full keto before and lost loads, but something a little less restrictive will work better I think since I'm in the middle of moving house etc.

If anyone needs to eat out, i found the pret salad boxes were the best in terms of suitable ingredients/macros while also being tasty and filling!

Thanks @BIWI this is a great thread, really informative.

We use a deep fat fryer and for the last few years have used beef dripping instead of veg or sunflower oil, it works well. However I do use fancy cold pressed rapeseed oil if I want the convenience of a liquid fat for frying so I'll need to stop that.

Never thought of roasting potatoes in ghee, will give that a try.

I'm interested in your deep fat fryer @Baystard - I got one recently but haven't used it yet (mainly because everything seems to be so carby!). But in the instructions (it's a Tefal one) it says not to use solid fats like beef dripping. But doesn't say why. Any ideas?

Also, any good low carb things you cook in yours? I'm itching to use it, having yearned for one for such a long time!

Oh, and for pan frying I use mainly olive oil and butter. Sometimes lard.

I believe it's because it's very bad for the element to heat fresh air (same as a kettle?) and if you use fat then the first time you fill it with solid fat there will be an interval when it's not covered. I've always melted the first couple of blocks of dripping in a saucepan and poured it in, then added the rest - IIRC it takes about 7 or 8 blocks. No problems.

I'm the only low-carb person in our family so I'm a minority user of the fryer. I hear good things about blitzed up pork crackling as an alternative coating to breadcrumbs for deep fried articles but I keep forgetting to buy crackling to try it!

You've reminded me - for Christmas I roasted a gammon joint, and for this recipe you have to remove the skin before you roast it. The instructions for using the skin for crackling were amazing - basically, you put the skin on a baking tray, cover with a sheet of parchment and put another baking tray on top, then weigh it down with something like a heavy pan (one that can go in the oven, obviously!) and roast along with the gammon.

It was the best crackling I've ever made, and would be perfect for using on the outside of Scotch eggs.

Might have to try that!

I'm new to this and there's loads to read up about so iv looked at the low carb meal so basically it's them 3 times a day..no fruit or snacks I'm sorry If its already been asked 😅

Have you read the thread @YesIcan3?! If you have, then you'll see from the rules that there's no fruit allowed for the first two weeks. From then on, some fruit, in moderation - mostly berries - is allowed.

Snacking is allowed, but really shouldn't be necessary once you've switched from carb-burning to fat-burning, because your blood sugar levels will be stable/your key hunger hormones will be balanced, and this means that you simply won't be hungry between meals.

In the first couple of weeks you may need to have some snacks to hand, but these have to be low carb ones, such as olives, cheese, cucumber/celery, hard-boiled eggs etc.

You can't use solid fats in a deep fat fryer if it has an exposed element. If the element is concealed under the bottom of the pan then it's fine. I use lard in mine because I mainly use it to cook pork but beef dripping is probably better quality. I have a large amount of pork rind drying in the oven right now to make fresh pork scratchings in my deep fat fryer. They're so much nicer when just cooked and still hot. Grin

Day 3 for me today.
I had boiled eggs for breakfast
Salad with mayo and a roasted chicken thigh for lunch
Roast beef (a bit too lean) with cauliflower, sprouts and broccoli
One cup of coffee with double cream
Plenty of water
The sugar cravings are real!
