Summer Low Carb mini-Bootcamp - week 3

Welcome to week 3 of our mini-Bootcamp. If you have been following strict Bootcamp then you can move to Bootcamp Light this week. This means you can eat when you're hungry rather than sticking to three meals a day, and you can re-introduce alcohol, low carb fruits, nuts and seeds, and dark chocolate in small quantities. Some people choose to stick with strict Bootcamp on weekdays and do Bootcamp Light at the weekend.

Note that there is almost always a weight loss stall between weeks 3 and 5 of going low carb so do not worry if the scales don't drop this week or next. It's caused by a temporary increase in water retention and you will still be burning fat if you keep following the rules. If the lack of weight loss gets you down then remind yourself that this is to be expected and the scales will start moving again.

Hello all - I'm still here although not posting as much as I should! It's looking like another week of staying the same (unless I get an overnight whoosh!) - I am currently on antibiotics and wonder whether these might be having an effect? I've got a few more days to go on them in any event.

B - coffee
L - chicken thighs, grilled halloumi, green salad, mayonnaise, olives, hard boiled egg.
D - not sure yet - might make those cheese muffins shared above!

Hi all, I've been behaving myself with my food but keep forgetting to update!

I've weighed a couple of times this week just out of curiosity and I've lost a bit the last few days but definitely hovering around the same couple of pounds which I'm guessing is the week 3-4 stall that's been mentioned!

Genuinely finding this a good way of eating where I don't feel deprived of anything though, which is a revelation to me!

@FusionChefGeoff those rolls are great! The consistency and texture is really like bread and while they were cooking it smelt like I had bread in the oven.

Reposting the link for anyone who missed it earlier. keto rolls Of course it's American so measures in cups, but I equate a cup to about 200ml which is easier to measure and it worked out fine. And the oven temp was 175 degrees.

Ingredients
1 cup almond flour
1/4 cup psyllium husk powder
1/4 cup ground flax
2 teaspoons baking powder
1 teaspoon Pink Himalayan sea salt
2.5 teaspoons Apple Cider Vinegar
3/4 cup boiling water

2 egg whites
1 egg
Sesame seeds or similar to top buns with (optional)

Instructions
Preheat oven to 350 degrees.
Mix the almond flour, psyllium husk, flax, sea salt, and baking powder in a medium bowl.
Meanwhile, boil the water.
In a small bowl beat the eggs whites, egg and vinegar lightly (just quick enough to combine it all).
Add the eggs and vinegar into the bowl with the dry ingredients. Mix with a hand whisk for about 20-30 seconds.
Then add hot water and continue mixing for another 20 seconds.
Using your hand (be careful, it will still be hot) and mix for another 10 seconds using a folding motion with your fingers open so the dough can move through your fingers. The dough will get more "doughy" as you do this.
Since your hands will already be goopy, just scoop and put clumps on a greased cookie sheet. Then top with sesame seeds or other seeds (optional).
Bake for 45 minutes and then let them sit for 10 minutes before eating.
Store in an air tight container in the fridge!

Brunch: creamy coffee with bacon, eggs, mushrooms and tomato

Dinner: pulled pork, coleslaw, salad and maybe some guacamole.

It's currently raining so hoping it clears up a wee bit so we can go for a walk later.

@venusandmars oh glad you like them!! They last for ages too - left 1/2 a roll in the fridge by mistake when we went on holiday and still good 10 days later.

I usually pair them with making Caesar dressing as it uses all the excess yolks Grin

I had VERY creamy scrambled egg with 2 extra yolks ☺️ I've put the other rolls in the freezer for our camping trip in September. Or maybe I'll eat them and make another batch...

@Mimosa1 a bed push is pushing a bed on wheels they are pushing 250km with few overnight stops another 3 hours and they will have reached final destination.

I made the muffins with the proper recipe now and they are amazing. Just had them for breakfast. I am determined to stay off the biscuits again tonight. Lucky last is always the easiest night shift as I'm in the zone now.

Ooh those rolls sound fab. I love the SLC rolls but they do go moldy fast. We took some to a Softplay today which serves bacon rolls and asked the lady at the counter to use them instead and they were great but I was glad I'd brought extra as some had sadly to be chucked as they'd gone off. Very impressed that the homemade one lasted 10+ days in the fridge!

One thing I have noticed is that having lost some weight, and also my eczema has almost completely cleared, I am taking better care of myself. I've dyed my roots, tinted my eyebrows and used a bit more make-up. I just feel a bit happier with myself.
Today I've had
B bacon, fried egg, mushrooms and kale
L chicken tikka, mayo and salad leaves
D salt and chilli pork belly, green veg and cauliflower cheese

I'm still too scared to go further of strict BC than a few raspberries.

Had a full day out today, that ended up longer than planned which meant I hadn’t catered lunch for me. But, the discussion up thread about not feeling hungry for longer times is just amazing. I had my breakfast about 10am and managed to get back from the day out at 5pm and had a wedge of cheese to take the edge off before dinner. I didn’t have a major blood sugar dip or mood swings.

I also feel happier all round as opposed mentioned and started investing more in me- Agree about the overall improvement in general well-being.

Also, has anyone else become gluten intolerant as a result of LC now or previous attempts? I really have and looking into symptoms, Aside from bloat and sluggishness, I started to get really bad cracked feet, I mean deep. Every time I lc they start to heel but this time around they are on the way out. I read a long time ago that this is something coeliacs can get and diabetics due to the body not being able to process the good nutrients...I may be wrong on detail- please correct me if I’m off track. But, I am amazed how my body is healing as a result of cutting out the wheat and sugar.

It really is a win win Smile

Welcome back MrsKoala Flowers I was thinking of you today: you'll be pleased to hear that I've bought a dark pink double stemmed orchid for the bathroom for a bit of contrast Smile I'm also putting the short test stem sweet peas that I pick from the garden (which tend to be various shades of pink and purple) and/or the short stemmed bright pink dahlias into a wee vase on the shelf, for contrast.

In other news, I went to a party yesterday for the first time in years Shock It was the captain of the women's rugby team's 30th, so a massive range of ages and lots of alcohol . I only had four glasses of Prosecco (dh kindly drove a friend and me there and then came and picked us up at midnight) and alternated them with one or more glasses of water, but I'm such a lightweight that I was absolutely wasted this morning Blush. A dreadful headache and absolutely knackered Sad Dh left me in bed and went and sorted the junior rugby at the club (I was supposed to be going along this week to start getting registrations sorted) and I eventually surfaced got up at 2 ShockBlush

At least I didn't fall into carbs, either last night or this morning. In fact, the problem last night was probably that I drank on an empty stomach.

I've just weighed in for the week and am down 1lb which I'm pretty pleased with. After four days of stomach bug doing the rounds in my house I had no idea whether to expect to loose 5lb or gain 10 Grin
