Summer Low Carb mini-Bootcamp - week 3

Welcome to week 3 of our mini-Bootcamp. If you have been following strict Bootcamp then you can move to Bootcamp Light this week. This means you can eat when you're hungry rather than sticking to three meals a day, and you can re-introduce alcohol, low carb fruits, nuts and seeds, and dark chocolate in small quantities. Some people choose to stick with strict Bootcamp on weekdays and do Bootcamp Light at the weekend.

Note that there is almost always a weight loss stall between weeks 3 and 5 of going low carb so do not worry if the scales don't drop this week or next. It's caused by a temporary increase in water retention and you will still be burning fat if you keep following the rules. If the lack of weight loss gets you down then remind yourself that this is to be expected and the scales will start moving again.

@prettybird and @GreeboIsMySpiritAnimal oh wow thank you!!! That's so inspiring - did my exercises last night and interesting about back pain as that's definitely starting to be more of an issue with me too. 6 months seems like such a long time but after at least 6 years of this (youngest DD turns 7 soon) it's nothing.

And maybe that means I can start eating some of the things on my 'nope' list again including the homemade Keto rolls woo hoo!!!

I'm working away today so will be taking a packed salad for lunch but dinner is a BBQ so I'm taking my vinaigrette and mayo just in case (!) but should be ok off the normal menu hoorah. Should reduce snacking too as I simply won't have the option Smile

I have stayed the same this week. I will be away for two weeks after this weekend. Doing a lot of travelling around the country and meeting friends and family that we haven’t seen for a long time. I’m at the top end of my maintenance weight. At the top end of a normal bmi. I am going to try to keep as far as possible to the rules. For those who are new, this really works. There will be stalls but if you stick to it the weight will come off. Mine has melted off my waist which is unexpected at my age. My blood pressure has also come back to normal since I started this last October. I have been maintaining for a few months now reasonably successfully. Another half a stone would take me back to a weight I haven’t seen in 25 years and I didn’t think I would ever see again.

As part of my referrals I've ended up at a women's physio who's diagnosed a rather severe diastasis recti that she thinks could be the main culprit!!!! So I've got exercises and a 5 referral process which I am very excited about!!
Definitely want to hear those exercises @prettybird!

Down a pound today (of the 2 I gained over the weekend away) so another strict day and all the water.

Also @GreeboIsMySpiritAnimal who is our BootCamp star having worked hard to get rid of hers and also doing BootCamp so successfully to get her BMI done from 27 to 21 - which also helped her career Smile

Morning all. Woke very early this morning. Seem to need less sleep when low carbing. Had slept well.
Plan for today
L Last of the veg soup I made at the weekend. Avocado salad with green beans and nice French cheese.
D frittata with flgv
All the water.

Wearing new jeans -no muffin top. Happy days.

There's a nice recipe in/on the Guardian today for aubergine parmigiana with spinach and ricotta.

Also struggling with cakes at work.

B - rooibos tea and a long walk
11.30am coffee with cream
L - fried eggs, left over green veg, left over Christmas stuffing (sausage meat, ham, lemon zest, herbs)
D - prawn curry with spinach, cauliflower and served on cabbage 'rice'

I've got 2 weeks of eating out of the freezer so will be having some random choices and combinations. There's a turkey cranberry and chestnut pie, but since chestnuts are 33g carb per 100g, the pie will be going with dh for PIL's dinner tomorrow.

@KateF in the situation you describe I make sure and take some snacks that I can eat (even if it's in secret), a few nuts, a small bag of olives, or a pack of cheesies

@FusionChefGeoff could you remind me of your low carb rolls recipe - I remember they looked amazing!

Doing a happy dance today as two out of three children are back to school!

I started low carb as it's supposed to help with lipoedema. Does anyone have any experience?

Breakfast: scrambled eggs with mushrooms

Lunch: not quite decided yet but I'm not picking up my food shopping til this afternoon so probably something cheese or egg based!

Dinner: cod with butter, broccoli and kale

Yes!

Chuck a couple or three echalion shallots into a food processor, along with a pepper and a few chopped cloves of garlic (as much garlic as you like) and process till finely chopped. Then add your mince, season well with salt and pepper and any herbs you like, and process again till it is all amalgamated. Leave for about half an hour, if you can, for all the flavours to meld, and then tip out on to a board and form into balls.

Put these into an oven dish, drizzle with olive oil, and then bake for around 30 minutes, stirring/turning them half way through, till they're browned.

Then serve with whatever sauce you like - I usually make a tomato, garlic and chilli sauce.

My fifteen week old is just hitting the 4 month sleep regression and my two year old is doing everything possible to wake her up once I’ve finally got her off to sleep. So I am proud of myself for not eating all the carbs today Wink

B: berries, Greek yog and keto granola
L: 2 rashers of streaky bacon, 2 eggs scrambled, cheese string, homemade keto ‘bounty bar bite’
D: looks like lamb kebabs, halloumi fries and salad or sautéed spinach

I've also put grated Parmesan in my meatballs (just shalllots, garlic, mince, oregano, egg and olive oil I hate peppers of all colours ) on occasion. I just mix with my hands rather than the food processor and after I've rolled them into balls, I leave them to rest in the fridge.

I either fry them or (following Nigella's recipe), I drop them into a tomato sauce and let them cook for c20 minutes (don't stir initially to allow them to firm up).

No need to use egg in them. If you process them with shallots/pepper, there's enough moisture there to bind them. And baking them - and not disturbing them for the first 15 minutes or so of cooking - means that they'll hold together well.

Evening all.

I have a find!! Probably very late to the party but I discovered Tesco do bags of pre cooked cauliflower rice!!!
I just microwaved it and the. Turned it into buttery mash to have with my leftover beef!! Had to drain it a bit, but otherwise a really great quick win for LC!!
